Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

A delicate citrus/floral nose of fresh lime, guava and lavender warmth, given tension from herbal tones of pink peppercorn, lemon myrtle and the unmistakable, yet light scent of wormwood. Blood orange and peppery juniper set the tone on the palate with a fine interplay of refreshing herbal raciness and a pleasing sweetness derived from vanilla. Lavender floral and vanilla tones continue onto a smooth and elegant finish.

Bosque Verde is Spanish for green forest and this is the name of the farm where the bulk of the barley is sourced.This whisky is matured in ex-Port American oak barrels for no less than two years and is bottled at 46% abv. Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.
