The Chardonnay grapes used to create Vintage Blanc de Blancs were picked, pressed and then fermented to retain intense fruit flavours. The resulting wine shows a bright straw colour with light green highlights and a beautiful bead. The fragrant bouquet is perfumed with lovely aromas of cream and peaches, with light suggestions of citrus and honeysuckle. The elegant palate is filled with peachy flavours and zesty lemon acidity, offering a silky mouthfeel and a clean finish. This lighter bodied Blanc de Blancs tastes excellent with sashimi, sushi, and foie gras terrine.

A bright and complex aromatic profile displaying notes of pomegranate, dried strawberry, star anise and cranberry intermingle with hints of blue fruit, crushed violet, fresh tobacco and truffle. A finely structured palate offers both textural generosity and clarity of fruit expression. Red currant, dark cherry and cinnamon raspberry characters integrate well with supportive oak spice. Adam Marks established Bress in 2001 with a desire to produce wines with fruit sourced from notable regions and minimal intervention.“We believe certain grape-growing regions are better suited to particular grape varieties than others,” says winemaker Adam Marks. “The French have understood this for several centuries and some Australian wine producers are now embracing this belief.” Bress, located in Harcourt near Bendigo, Victoria, is one such producer. Adam doesn’t restrict himself to sourcing grapes from one specific region; he’d rather make the most of the diversity of climates and soils central Victoria has to offer and looks to the Yarra Valley, Macedon Ranges, Bendigo and Heathcote for the best quality fruit.

Dark brooding intensely varietal fruit characters showcasing signature aromas of cassis, anise, sarsaparilla, chocolate and freshly-ground coffee underpinned by typically classic herbal notes. Yering Station Yarra Pinot Noir is a classic Pinot Noir with red/black cherry complimented with brooding earthy undertones and subtle savoury spice on the nose. Sourced from a vineyard nestled in the foothills of the cool southern vales of the Yarra Valley where the grey loam soils show seams of deep red volcanic clay, the 2015 Seville syrah is handpicked, fermented with a high proportion of whole bunches and receives no additions other than a small amount of sulphur dioxide at picking and bottling. It is then aged in older French barrels before being bottled unfiltered and unfined.

This is a classic Yarra Valley Chardonnay from the Wedgetail estate, elegant, generously and voluptuous in style. It offers aromas of citrus, cashews, pear and a hit of vanilla. The mouth fill is full and satisfying with a crisp finish. Drinking beautifully now, and if well cellared will age gracefully for the next 5 to 8 years.
