The colour is rich red with brick notes. The Aroma is of sweet berries among many other things, pepper, rosemary, cherry, prosciutto. This Grant Burge Barossa Ink Cabernet Sauvignon is intensely deep red with purple hues. The bouquet is rich with blackcurrant, mint and dark chocolate. The textural palate has fine tanning, and excellent persistence with intense chocolate and berry flavours. A deeply coloured wine with great depth and varietal definition. This wine has been carefully blended with vibrant, flavour packed parcels of premium Barossa wine to create a Cabernet Sauvignon so bold and dark in colour, it's almost ink.

The Bishop has the fingerprints of Ben and his father Colin all over it. Ripe, rich, concentrated and supremely complex, the Bishop is the wine for all those full-bodied red fans out there. Ripe liqueur cherries on the nose compete for attention with vanilla, mocha and coffee aromas while the palate is full of sweet berry fruit flavour and a soft, luscious finish that seems to persist for an age. While exuberant and lively when young, the Bishop is known to handle medium term cellaring extremely well and reward any with the patience.

From vines over or approaching 100 years old, this was open - fermented with wild yeast, then spent 18 months in some new, mainly old, French oak barriques. Concentration shows in the colour and aroma of this shiraz, as well as the powerful, full-bodied palate, which shows guts and grip, if not great elegance. Dense chocolate and blackberry aromas are a feauture of this beautiful wine.
