Laurent Ponsots new company is a stage in a wide-ranging project that began four decades ago. In this different format, Laurent Ponsot continues to use his experience, his craftsmanship and his passion to serve the terroir of Burgundy. In 775 Emperor Charlemagne donated this vineyard to a Catholic institution in Saulieu, which kept it for the next 1000 years! Laurent Ponsot SAS sources its grapes from these three villages via six different producers, making a wine representative of the appellation whose richness is derived from its diversity. The wines are finely chiselled, precise, and rich with the scent of flowers and minerals. Match with fish, shellfish or a cheese platter to perfectly showcase their qualities.

This unique cuvee is respectfully composed of the three champenois grape varieties - Chardonnay, Pinot Noir and Pinot Meunier. Entirely vinified in oak, Sous Bois (under wood) totally masters the art of blending by renewing the ancestral spirit and savoir-faire of the original Champagnes. The nose contains defined aromatics of dry fruits and fresh citrus, coupled with finely buttered seductive notes that expresses the mature complexity linked to the vinification in oak barrels. The palate is bursting with flavours of grilled brioche, vanilla and toffee, complimenting the refreshing texture and exceptional finish.

Like the Latitude, this is 100% Côte des Blancs Chardonnay (the vineyards are in Cramant, Avize, Oger, and Vertus), yet the vineyards from which it was drawn have thinner topsoils and so the vine roots plunge straight into the chalky bedrock. The name here refers to the vertical nature of the geographic locations of the vineyards as well as the style of wine resulting from the very chalky soils of these sites i.e., a more linear, mineral wine. While Larmandiers Latitude is expansive across the palate, the Longitude is all about minerality, line and raciness. William Kelly has called this wine one of the finest non-vintage bottlings to be found in Champagne and, while the are no reviews available for the 2019 base, the high ratio of reserve wines (40%) and the strength of this low-yielding vintage should leave you will little doubt as the quality on offer.

Previously released under the Domaine Boisson-Vadot label, wines from their holdings are now made and presented under the labels of Bernard Boisson's children; his son Pierre Boisson and daughter Anne Boisson. While the two children vinify separately, they share the same cellar in Meursault, and produce wines that are more similar than they are different. Vine age is impressive, with many plots over 60 years old, and no herbicides or fertilisers used. Wines are fermented wild in barrel, thereafter raised in oak for 19-22 months, with no more than 30% new oak used predominantly for the top cuvées. Winemaking for Anne's Meursault sees a cold settling for 12 hours before fermentation in barrique, of which 20% is new oak. Lees are stirred four or five times at the end of alcoholic fermentation in early spring, and then given 22 months élevage.

Dom Pérignon is the most famous Champagne in the world, and for good reason. The bouquet sparkles with delicate fresh violets in a setting of white peaches. The soft delicate flavours continue while the senses are tickled by the most delicate of fine bubbles. Though this is such a fine delicate wine, the complexity is astounding, along with its length. Stunning.
