Winemaker Tim Kirk's ethereal and evocative Clonakilla Shiraz Viognier is perhaps one of the most important advances in the development of Australian Shiraz since the release of 1952 Penfolds Grange Hermitage. The fruit is sourced from two adjacent estate-owned vineyards. The original vineyard has south-east and south-west aspects whereas T and L Block faces north-east. Lying at 600 meters above sea level, the soils are granitic with sandy brown and red loams over friable clay. Traditional 'Burgundian' winemaking techniques are employed "to highlight the inherent flavours in the fruit". The aim is "to produce wines with natural balance and roundness". Clonakilla Shiraz Viognier is medium to full-bodied with highly aromatic ginger, white pepper, apricot fruit, underlying savoury French oak and fine slinky dry tannins. The Viognier component melts into the Shiraz and is rarely more than a "subliminal influence". The style captures the essence of contemporary winemaking philosophy and regional expression.

Bright, intense colour and complex aromas evoking violet and black cherry with notes of truffle and game. Good balance between texture and acidity with a long aftertaste.

Often referred to as 'Baby Grange' or 'Poor Man's Grange', Bin 389 was the wine that helped to build Penfolds' solid reputation with wine drinkers around the world. A magnificent blend of Cabernet Sauvignon and Shiraz from the very best regions and vineyards available to Peter Gago and his team, the robust nature of the Cabernet grape give structure and body to the wine while the opulent Shiraz fruit provides suppleness and intensity. A true icon of Australian wine first created by the legend himself, Max Schubert, Peter Gago is quoted as saying 'Through thick and thin, across all vintages, Bin 389 always delivers - benefitting from over half a century of practice!

Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Back in 1998 Chief Winemaker, Chris Hatcher, decided it was time to take Wolf Blass into the modern world and the result was a single varietal Shiraz that was 100% aged in French Oak, unlike their famous flagship the Black Label which is a blend and aged in American Oak. A wonderful contemporary version of Wolf Blass that is a cavalcade of rich blueberry, blackberry and complex elements of dark chocolate and warm spice. Superbly long on the palate with an obvious hint to a long future in the cellar.

Best's Great Western Thomson Family Shiraz is an amazing wine and is without doubt one of the most important wines made in this country, with fruit coming from the original Thomson Family Vineyard planted in1867. These vines are over 140 years old! Hand picked and hand crafted, produced using century old techniques, this is a wine of true beauty, complexity and character. Only 2800 bottles produced.

Elegant and aristocratic kaleidoscope of aromas, an abundance of fruit flavours, blackberry, mulberry and blueberry with supporting complexity of mint, eucalypt, rhubarb, Turkish delight and cinnamon. Seamless and layered, combining sweet red and black fruits, cranberries, mulberries and blackcurrants. Mortadella, shaved fennel and dried fig entice. Savoury details of pâté, green olive tapenade, salsa verde and espresso liqueur carry exceptional length. Succulent and velvety in texture, the wine is underpinned by even, mouth-coating tannins. A beautifully crafted wine that promises to reward patient cellaring. Immediately heady yet refined, offering layered aromatics of exotic spice and elegance. Black berry fruit sits alongside pastel confectionary notes, perfumed violets and lavender, with deeper accents of dark Belgian and Varona chocolate, roasted coffee bean, Brazil nut and pecan pie. Savoury nuances of bresaola, olives and lavosh add intrigue and depth. On further inspection, notes of walnut and mahogany polish arise.

Penfolds RWT Shiraz is a big juicy Barossan Shiraz refined by the use of older French oak barrels. 1998 is considered to be one of the classic vintages of the modern age. Drinking wonderfully now but with many years still to come in its development, this is a great addition to any cellar.

From a 37-acre vineyard, Château Pavie Macquin is stunningly situated on the clay-limestone plateau of Saint-Émilion on the right bank of Bordeaux. 2010 has produced a formidable wine: a blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon, this is a top release of the harvest year and a highlight from St-Émillion in 2010. Tannins, restraint and inward concentration are motifs, this is a wine for the patient, sophisticated collector who wishes to embellish a cellar with pedigree wines that need time and maturity to come to the fore.
