Laurent-Perriers style and personality are defined by its very high proportion of Chardonnay. The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Mumm 4 is a striking, modern reinterpretation of the champagne maturation process breaking all the traditional codes associated with champagne. This mature wine is clearly labelled to show the number of years spent on the lees rather than any specific vintage year. The look: Exuberant bubbles with reflections of gold, showing discrete maturity. The aromas: Complex ripe aromas of yellow and white fruit, peach marmalade and buttercream alight entice. The taste: Fresh, lively and rounded, yet with a tension that plays right through to the finish. Mumm 4 can be savoured slowly to enjoy the deep complexity or enjoyed matched with poultry with chanterelles and apricot compote, or truffled Brie.

Nv Billecart Salmon Brut Nature, A visual intensity of pale gold, enhanced by the clarity of a pure and sparkling ensemble. With ultra-fine, regular and plentiful bubbles which are focussed towards the surface of the glass in a disciplined manner. It’s the engagement of an authentic seduction, nuanced by the purity and the exact maturity of a distinct and vibrant aromatic profile (orchard fruits, fresh citrus and small pains au lait). An ample and harmonious tactile approach, preserved by a deliciously chiselled mineral tension. A well balanced and nicely rounded lightly sparkling sensation is strengthed by a captivating gustatory rajectory (white flesh fruits, lime trees and almond cream.

Established in 1836, Madame Pommery is credited with creating the first vintage brut style of Champagne in 1874, at a time when most champagnes were excessively sweetened with sugar. This revolutionary dry style set the benchmark for the rest of Champagne and it is in this spirit that the style of Pommery endures; with each cuvée displaying sublime elegance, finesse and freshness. Pommery is one of the few Champagne Houses that produces their large formats in the actual bottle in order to allow for optimal ageing.

Only made in the very best of vintages by winemaker Guillaume Roffiaen, the primary aromas are dominated by the signature style of the Cuvée Spéciale, with citrus fruit freshness and floral hints as its calling card. In the mouth there is immense freshness from the Chardonnay backbone, bringing apricot and delicate peach notes. The cris, fruity attack delivers a thirst-quenching sensation, with mineral notes stimulating the taste buds. The mid-palate is perfectly balanced, with the silky Meunier paving the way for a surprising aromatic finale of great depth and complexity, from the well-structured Pinot Noir.
