Our Olorosso Casks Batch 4 & 5 won Bronze at the 2019 Australian Distillers Awards. Being one of only a handful of Single Malt Whisky distilleries in the world who grow their own barley and have access to pristine spring water on site sets us apart when considering where our unique flavours are developed. The first ever release of Sullivans Cove XO Double Cask Brandy is a marriage of ten different casks, each selected for their individual flavour profiles to create a uniquely Tasmanian spirit much more than the sum of its parts. Each brandy in this batch was aged for between nine and ten years in various French Oak ex-tawny and American oak ex-Bourbon casks, distilled from a wide variety of Tasmanian wines including chardonnay, pinot noir, gewurztraminer, sauvignon blanc, cabernet sauvignon and merlot to achieve incredible complexity. Lighter and more citrusy than Sullivans Cove XO Single Cask, Double Cask remains a beautifully full-bodied brandy with an intriguing balance of topical and savoury

Single cask malt whisky from Overeem in Tasmania aged in a French Oak Sherry quarter cask. This smaller cask leads to greater interaction between wood and liquid during maturation and results in a more intense whisky.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

On the Eye: Deep brass / gold On the Nose: Notes of choc-chip cookie, orange marmalade and clove. On the Palate: Spicy dried fruits (raisin and date) The Finish: Hints of plum, sultana and cocoa

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Perfect for celebrating births, weddings, wakes and anything in between.

Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. It makes for a perfect after dinner gin. VOL / 500ml ALC / 33.5%

Each 500ml hand-crafted cocktail lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. As each Gift Box is manually waxed, no two boxes are the same, some minor organic imperfections may be visible.Old Fashioned:The Old Fashioned is said to have been first created at the Pendennis Club, a famous gentlemens club in Louisville, Kentucky in 1881 in honour of Colonel James E. Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest. Pinch the zest so the oils spray over the drink before dropping it into the glass.
