The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being placed in casks for ageing. Chateau Palmer 3me cru classe

Regarded a Super Second (but technically a 3me growth), Palmer is capable of producing wines that equal or even outstrip the quality of its famous Premier cru neighbour, Ch. Margaux. Named for the wealthy English military man who bought the estate in the early 19th century, Palmer is now majority owned by the Mahler Besse and Sichel families - famous Bordeaux negociants. Many of the best plots on the property were purchased after the Classification of 1855, explaining in part why Palmer did not warrant higher standing at that time. Certainly today there is no question that the wine is among Bordeauxs best. Glenfiddich has a bottling hall onsite along with a large bottling plant in Bellshill. It is visible in a rocky valley’s many solid strata; laid down over millennia, worn smooth by wind and rain. This rare single malt is made through remnant vatting, a pioneering process in which the Glenfiddich malt master carries one batch over, time and again, and marries it with the casks selected for each subsequent release. The Dalmore distillery was founded by Alexander Matheson in 1839, a merchant adventurer determined to create an exceptional single malt whisky. The Dalmore 25 Year Old was first introduced in 2013, following the distillery's tradition of being matured in an extensive selection of casks, The spirts for the Dalmore 25 was initially aged in American white oak, before being hand-divided into 25 year old Palomino Fino sherry butts and first-fill bourbon casks. After these two steps the whiskies are married in carefully selected bourbon barrels before before finished in Tawny Port pipes from Portugal. The nose is full of aromatic exotic fruits, citrus, vanilla pods, treacle toffee and fig cake. On the palate are flavours of Madagascan vanilla pods, thick treacle toffee and chocolate truffles with a finish of maple syrup, dark chocolate and spiced gingerbread.

Glenglassaugh is produced using the highest quality of Scottish barley and traditional distilling methods, their key focus being on quality. While many distilleries have become highly automated, at Glenglassaugh their spirit is still handcrafted by a small, highly skilled team dedicated to creating the highest quality product. Only the finest casks are selected to slowly mature their precious spirit in their coastal warehouses until it is ready. Since 1875, Glenglassaugh distillery has sat quietly on the edge of the picturesque Sandend Bay, breathing in the North Sea air which flows through its warehouses and invigorates its sweet Highland spirit with notes of the sea. Silent for a period of more than 20 years, the distillery was re-awakened in 2008 and its stills brought back to life. Unearthed from the coastal warehouses, a rare collection of vintage casks were discovered from before the distillery fell quiet. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. The scales are very well balanced on this one. In fact, if it weren’t for the gentle pauses at the beginning of the palate and the finish, it would be too perfect, and therefore not as alluring. As Miles Davis once said, “It’s not the notes you play, it’s the notes you don’t play.” Well said. And the way the oak develops during the finish, just when you don’t want to let go, keeping the show going; it brings another season to binge on, and we love it.
