The Macallan Edition No. 5 Single Malt Scotch Whisky

The Macallan Edition No. 5 is a homage to the diversity and complexity of natural colour, celebrating Macallan’s commitment to natural whisky. It follows Editions No 1 and No 2, focused on cask influence; Edition No 3, which explored the impact of aroma; and Edition No 4, which was focused on structure. Sarah Burgess, whisky maker for Macallan, adds, "Whilst colour development starts with mixing basic colours with precision to achieve different shades, when it comes to whisky making, it is the knowledge and understanding of a specific palette of colours from the cask which is the starting-point." The colour connection is made all the more salient by ‘a uniquely bold shade of purple’ used on the label, developed by designers at the Pantone Colour Institute in New Jersey. 48.5% Alc./Vol.
Talisker 25 Year Old Scotch Whisky
Talisker, one of the remotest distilleries in the world, is situated on the storm lashed Isle of Skye and has a colourful history dating back to 1830. Denounced by the local clergy, praised by none other than Robert Louis Stevenson and even suffering a still-room fire in 1960, Talisker has survived and today produces some of the smoothest and character full malts in Scotland. The 25 Year Old is sweet and mild to begin, with some acidity and saltiness. Extraordinary flavour development then envelopes the palate that becomes dry and minerally with a mild dusting of ground white pepper.
St Agnes XO Grand Reserve 40 Year Old
Dark dense amber. The nose is of dried figs, hazelnut, orange candy and prunes. The aromatics continue with cocoa, vanilla cream and smokey oak from over four decades in small oak. The palate is endlessly complex. Chocolate truffles, hazelnut, prune, almond and cigarbox tobacco. The 40 Year Old Grand Reserve continues to linger long after first sipped.
Sullivans Cove American Oak Ex-Bourbon Single Single Malt Whisky (TD0342)
Product Information: The American Oak ex-Bourbon single casks are some of their most awarded and esteemed expressions. Aged in American Oak ex-Bourbon casks, this oak varietal beautifully enhances Sullivan Cove's distinctive and fruity spirit. With a robust malt base, it unfolds layers of vanilla, caramel, coconut, fruit, and delicate hints of white floral and herbal notes. As single cask bottlings, every batch presents distinct nuances, reflecting the character of each barrel. Cask number 'TD0342' was distilled in December of 2008 and decanted in November of 2023, maturing at 14 years, 8 months, in single 200-litre, first-fill American oak bourbon cask. Yielding just 215 bottles in total, this whisky is bottled at a strength of 47.1%. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good water and good grain is the foundation of all high-end whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Leather, Wood Shavings, Exotic Fruits Leather and wood shavings from freshly cut wood. Like someone had just planed timber. Mahogany and nuts. The morning dew of summer meadows. Mild exotic fruits. Light vanilla. Floral, smooth, fruity and fresh! Palate - Citrus Peel, Malted Milkshake, Smoke Smooth and strong with caramel and fresh oak. Lots of toffee, oily and full. Vanilla and wee smoke. Finish - Smooth, Ginger Spice, Black Pepper Superb whisky, fresh and versatile, characteristic and exotic! You can really sense that this Australian whisky was made with rainforest water. Everything is smoothly in balance, even though the palate is full of usually so dominant notes. The Dalmore 21 Year Old Single Malt Scotch Whisky
For over 150 years, the Dalmore has set the standard in multi cask maturation. Hand selected casks, from the world's finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse. The 2023 release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts. The casks used to finish this exceptional dram were specially selected by Dalmore’s Richard Paterson. They rested for decades at González Byass in Jerez, where they were used to mature 30-year-old Matusalem Olorosso Sherry, before making the long journey to the Scottish Highlands. This is not the easiest way to source a whisky cask, but the extra effort makes perfect sense when the Dalmore 21 Year Old hits your glass. Seville oranges, bitter chocolate and Colombian coffee tantalise on the nose, while sweet liquorice, black forest fruits and roasted walnuts delight the palate, finishing with notes of peaches, ginseng and pear tarte tatin.

The Macallan Estate Single Malt Scotch Whisky
After a slow twelve months, new releases from Macallan are once again gaining momentum. The impressively packaged Macallan 'Estate' is a tribute to the distillery's heritage and location. Made using a proportion of barley grown at Easter Elchies estate (which is distilled just once a year), the estate-grown grain honours the birthplace of every bottle of Macallan. Whisky Maker Sarah Burgess describes a malt with subtle hint of citrus balancing the traditional sherried richness, resulting in a complex dram with a long finish. Very limited stocks. The latest chapter of this renowned collection is adorned with the signature of their Master Distiller, Kevin O’Gorman. After months of exploration, O’Gorman crafted a balanced blend of rare and hand-selected single pot still and single grain Irish whiskeys from Midleton’s exclusive inventory to create this truly special release. Matured in lightly charred ex-bourbon American oak barrels, the Midleton Very Rare 2023 Vintage Release delights with decadent flavours and a tantalising aroma. The aroma, taste and finish of this whiskey will enliven the palates of those new to this collection while taking the seasoned whiskey collector on a journey through an exciting exploration of taste. If history has taught us anything, it’s that no idea is new—but this idea, grown from an appreciation of what has come before, is a new take on an old legacy inspired by Midletons commitment for a greener future. The new secondary Midleton pack takes inspiration from the original cardboard box created for their first vintage in 1984. This original box ran from the inaugural year in 1984 until 1990. They were hard cardboard boxes lined with a beautiful golden fabric, while each bottle was 750ml topped by an old-style screw cap. In 1990 the bottle was changed to the new European regulation size of 700ml, while the oak boxes replaced the original cardboard cases. A metallic plate decorating the front of the box replaced the old, printed title on the cardboard boxes from the 1980’s. 2017 saw a new double-doored wooden box introduced, and a new bespoke bottle with the inclusion of the Midleton pen nib. Added to this, a new label adorned the bottle inspired by the original from 1984. 2023 completes the circle with the return of a more sustainable offering. The nose opens with an intricate medley of fruits including nectarines, ripe melon, green apple, and apricot. A solid foundation of pot still spices, showcasing notes of freshly peeled ginger and crushed peppercorns, work in tandem with the aged grain’s perfumed notes of dried flowers and delectable golden syrup. The oak continues to reveal itself, adding notes of vanilla, combined with a honeycomb sweetness and freshly roasted coffee beans. The palate is luscious at first with succulent fruits and a distinctive creaminess along with a herbal quality akin to camomile tea. The pot still spices add depth and intrigue as they weave amongst the floral grain qualities found lingering throughout. The charred oak’s influence continues to build over time creating additional complexity as the wood-derived spices complement the ever-present fruits of candied orange and dried apricot. On the finish the fruits and pot still spices build to a crescendo before giving way, leaving the final say to the oak tannins and antique grain whiskey.
Meukow 1862 Esprit de Famille Cognac
Meukow Esprit de Famille is Meukow's most exclusive Cognac and pays homage to the family history of the house; directly translated, 'Esprit de Famille' means 'the spirit of the family'. Established by two brothers who came from Russia in 1862 to source Cognacs to bring back to the Czar of Russia. Well, the two brothers loved the region and the Cognac so much, they never returned! Now managed by the Coste family, Meukow gained 'overnight' fame after Michel Coste adorned the bottles with a black panther which has become a worldwide icon for Cognac quality. L'Esprit de Famille is a fine Champagne blend of both Grande and Petit Champagne eaux-de-vie; the finest of the Meukow holdings. With only 12 bottles available in Australia, this is an ultra-premium Cognac fully deserving its place amongst the upper echelon on the world's finest spirits.
