The team at Hay Shed Hill has selected the best vineyard blocks on their Margaret River estate to create the Block Series. The fruit for this wine comes from some of the oldest Semillon and Sauvignon Blanc vines in the region. Full straw with yellow green hue, it presents a plush honeydew melon and warm honey mix with guava and lime juice generosity. The developing palate has a mouth-filling and harmonious mix of lime and melon with deeper traces of tropical fruits and touches of biscuit and honey chiming in on the finish. A complex barrel fermented style and ready to drink.

A delicious wine to drink with or without food. The nose is loaded with tropical and passion fruits, which follow through onto the palate. Delicious fruit sweetness balanced by focused acidity and freshness makes this a very moreish wine. The grapes for this unwooded style are picked slightly riper than most in order to eliminate green characters and maximize the flavours of the tropical fruit spectrum and to give the wine greater palate weight and length.

Light gold, with a fresh, green rim. Stonefruit, pear and citrus notes and seductive fresh toast, dried herbs and malty aromas from barrel fermentation. Palate Remarkable fruit sweetness, intensity and persistence, matched with lovely texture and savoury elements and balanced by fresh, natural acidity. A prolonged cool and wet growing season meant the vines were lush and healthy heading into ripening. This resulted in later harvest dates, accentuated by the cool and wet ripening months; conditions not experienced in Western Australia for more than 10 years. These conditions, coupled with the absence of heat events, produced highly aromatic whites with good natural acidity. The fruit was selectively handpicked at perfect ripeness, before being loaded into an airbag press and gently squeezed. The free-run juice was continuously tasted until an optimum point was reached. The juice underwent wild fermentation in new French oak puncheons, then remained in barrel for 7-10 months, with monthly lees stirring to provide texture and mouthfeel. Each batch was carefully assessed for inclusion in the final blend. This minimal handling has produced a unique, delicate Redbrook Chardonnay style that will develop great complexity over time.

Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.

Aroma - Pungent Sauvignon Blanc characters of lychee, goosebery, passionfruit and lime along with roasted red capsicum and cut grass. Palate - Full and textured with balanced acidity. Viticulture - Fruit is sourced from neighbouring properties in the northern Yallingup sub-region of Margaret River. Direct input from Forester’s viticulturist ensures well balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - Modern white winemaking techniques are employed in the production of the Lifestyle Sauvignon Blanc, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The clarified juice is then racked to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to maintain the Forester Style. Storage and Bottling - Bottled under screwcap into a burgundy bottle.
