This single vineyard Sauvignon Blanc was fermented cool and matured over three months on lees to build complexity and palate length.

The current release of the Fire Gully Sauvignon Blanc Semillon is a superb exampe of the blend. Complex and interesting with fascinating oyster shell aromatics, intense pure white tropical flavours with schisty minerally notes: powerful, vibrand and tangy, finishing fresh and zesty. This wine is a blend of 79% Sauvignon Blanc, 16% Semillon and 5% Verdelho, and is made from certified biodynamic fruit. Harvested on the fruit and flower days of the biodynamic calendar and fermented without oak, additions of yeast or acid. Some skin contact time before fermentation.

The nose smoothly makes way for a lush palate, filled with flavours of juicy forest fruits and soft vanilla, leading to savoury notes. Together with palate coating tannins, these characters culminate in a cocoa and coffee dominated finish.

This exquisite Five Tales Sauvignon Blanc Semillon displays a pale straw colour with a bright green haze. The fragrant bouquet exudes lively aromas of tropical fruits, citrus and herbs, making way for a zesty and textured palate filled with intense citrus and tropical fruit flavours. These vibrant characters are balanced by crisp acidity, which leads this delightful white blend to a dry and refreshing finish. It has the potential to be cellared for 1 to 2 years from vintage. Suggested food pairings for this SSB include poached salmon, pan fried scallops and prawn ravioli.
