The house of Besserat de Bellefon was founded in 1843 near Ay in Champagne, and is now based in Epernay. The hallmark of the house is the lower than normal pressure that the wine is kept at under cork. This lower than normal pressure does not reduce the effervescence, but softens it, allowing the wine to partner better with food. Cape Mentelle's Cabernet Sauvignon under the guidance of Rob Mann has become one of Australia's most prestigious Cabernet's. Sourced from what many believe to be the true home to Cabernet in Australia, the Margaret River, Cape Mentelle produce a wine that has a plush full-flavoured palate of concentrated blackcurrants and mulberries with a minerally spine. Richly textured and vibrant the palate finishes long with fine yet firm gravelly tannins. A superb candidate for some medium to long term cellaring.

Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. On show here are marvelous aromas and flavours of bay leaf, black tea and some spicy mocha notes. Excitingly dense on palate with harmonious oak balance and impressive acidity. A brilliant wine.

Margaret River is a world renowned Chardonnay producing region and Pierro can rightfully stake a claim as to why. Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.
