Here, the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, centuries ahead of Dom Pérignon. The cuvée is rich in Chardonnay and Pinot Noir – like Champagne – and nearly half the wine is oak fermented – just like Krug! It’s an expensive technique (so rarely practised) yet important for depth and complexity. Enjoy on its own or with deserving canapés.

The aromatics are true to type, initially delicate, even shy. Then as the glass warms a melange of spices including cardamom with hints of Lily of the Valley. The palate has drying raspberry entry followed by raspberries more fresh and zingy. All in all a long palate that really saturates your tastebuds with flavour. Please serve chilled. If you serve this wine at room temperature much of the magic of the Fairytale will be lost.

Pretty transparent salmon dress, bright and limpid. The nose is franc and pleasant, a mix of fresh red berries (raspberry, gariguette strawberry); then come citrus flavors (mandarin and pomelo). The mouth is charming with a wine that is clean, fresh and available, where we rediscover the fruity and delicious scents that had been perceived on the nose. With time, supple wine, with a good acid support which gives it lightness and good dynamics. This Grenache was cultivated in the south of France, between Béziers and Perpignan, near the Mediterranean coast.The 20- to 50-year-old sloping vineyards are located on clay-silty soils coming from the old Aude river, and from the clay-limestone soils of the Minervois PGI area. Deep purple in color with vivid highlights. Intense nose of red fruits, notes of soft spices . The palate is rich, well-balanced, round withnotes of fresh fruits coulis such as raspberry, strawberry, blueberry. Notes of spices lend freshness to the wine.
