This guys bringing Juniper, and lots of it! Weve done this by using Macedonian berries distilled on our very own Copper Pot Still, named Ron. Who better to compliment our Juniper than the delicate flavours of Strawberry and Mint, along with all the other usual suspects. Weve achieved this via new world techniques being a Rotary Evaporator, otherwise known as cold vacuum distillation. Boiled at 30 degrees my friends! Keeping all that fresh flavour in... You can look forward to being reminded of the strawberry Lip Smacker and mint flavoured Extra bubblegum of your first kiss, minus the sweaty palms and braces.

Savoury, savoury, savoury! We've really explored what the rotovap can do with our take on a modern gin. We've added habanero and sunflower seed to create a relationship between fruit and savoury. The drink gets a good whack of spice from cinnamon and bayleaf then a touch of sweetness from passionfruit all of which is cold distilled maintaining freshness and vigour. On the still juniper has been macerated, distilled and vapour infused for maximum flavour which compliments and provides the back bone for the rest of the drink.The Modern Classic with a good tonic and wedge of lemon is nothing but exciting. I can not wait for you to experience the pull between the sunflower seed and quinine, the cinnamon hit, citrus and perfectly balance juniper backbone we've so painstakingly balanced. Created our farm in the small village of Allworth NSW, this boutique batch of hand-crafted gin is our homage to the tradition of gin making and the native flavours of Australia. Thirteen botanicals including native sage, myrtles, pepperberry and our signature native sugar bag honey bestow their magic upon this gin. The rare sugar bag honey is produced in small quantities by Australian native stingless bees. This inscribes a unique citrus sweetness that when distilled using a traditional copper pot still delivers a softness and depth to the gin. The result is a beautifully rich gin, at home in a traditional cocktail yet with the complexity and softness to be sipped neat over ice.

A limited release seasonal Gin, inspired by the Marrickville team’s favourite cocktail. This is a juniper-forward Gin (not a Gin liqueur), with tropical botanicals including coconut, pineapple, pandan leaf, lime, nutmeg and allspice. On the nose, there’s a nice kick of juniper with an underlying tone of caramelized pineapple and vanilla. Toasted coconut and hints of sea-spray and citrus add freshness. When sipped, the oily consistency coats the palate with silky coconut flavours contrasted by lime peel bitterness and fresh grassy notes. For serving, this sits well in a Martini or a Southside, but it’s just made for fruit juice - or take the distillery’s advice and make their version of a Piña Colada, with fresh-squeezed pineapple, a splash of coconut cream, a touch of sugar, squeeze of lime and bitters, served simply on the rocks. 5000 bottles produced. 42% Alc./Vol.
