Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

With a little time and aeration Juniper and Coriander enter the scene bringing the depth and distinction that one expects from a high quality Gin. As the spirit evolves further, the taste receptors are going crazy with anticipation, but they will have to wait as White Aspen and Riberry join the party. Add a little Lily Pilly and Dorrigo Pepper leaf and now your getting there. 1875 carries flavours of a fresh forest floor with earthy and sweet aromas of native quandong berries. Combine this with zesty aromas of lemon myrtle and the subtleties of Australian pepper berry, cinnamon and citrus peel creating a delicious Australian gin that is true small batch and hand crafted.

The Wild Bull is a traditional style Australian gin that was created to go perfectly in a G&T, appealing to everyday Aussies. The flavours in this gin are well balanced and amazing on the palate with juniper, coriander, angelica root, cardamom, cinnamon, orris root, and cubeb, finishing with a hint of vanilla. The Wild Bull is unashamedly unfiltered which leaves a lot of the essential oils within the product adding to the mouth feel. .

Unique Australian & Traditional gin botanicals are vapour distilled through a column basket with triple distilled cool~climate wine and then blended with Pinot Noir to produce our Goddess Pink Gin.

The most recent addition to the Wandering Distillery gin line up Odyssey is a great representation of our journey so far. Conceived in Victoria, refined in Western Australia and launched amid the Covid pandemic its definitely taken an interesting path to get to this point. Featuring a beautiful balance of 9 botanicals including finger lime, lemon myrtle, hemp and rosemary Odyssey is a versatile gin that can be savoured neat or with your favourite tonic selection.

The flavours in Adelaide Gin are floral in nature, built up using a traditional range of spices including cardamom, juniper, orris, coriander, and nutmeg, as well as the beautiful richness of Kangaroo Island lavender.Adelaide Gin is a sophisticated dry gin, perfect when served neat. Those who prefer to mix their gin should serve it with something that compliments the floral nature, such as a light tonic with a sliver of orange. As an alternative, Elderflower makes a lovely pairing. It also partners well with other flavoursto create magical gin-based cocktails.
