Mount Horrocks Cabernet Sauvignon is the result of Stephanie Tooles expertise in finding the right balance between fruit richness and oak maturation. Beautifully marrying these two components has given birth to a poised, well-structured, and delicious wine that will keep you wanting more. The nose is a fragrant display of light herbs, fresh mint and red currant aromas with hints of cedar-like oak. The palate boasts of delightfully ripe tannins, and features red currant and other classic dark fruit flavours. This dark and inky Cabernet Sauvignon will definitely blow you away with its complexity, depth and vibrancy. It pairs very well with savoury beef, game meats and cheese.

Seductive from the first sniff. Certainly got me interested. Remarkably soft and supple Cabernet with almost cashmere fine tannins and an effortlessly smooth and long palate structure. Slightly chalky tannins add some balance and the follow though to the finish is extravagant and stylish.

A wonderfully elegant yet flavorsome wine bursting with red and black currants, cherry plum fruit leather with subtle undertones of violet, aniseed and subtle cigar box aromas. Production: 2015 Vintage - 100 Cases Oak maturation: New & 2 Yr old French oak hogshead casks for 15 months. Handpicked and gently crushed just after dusk on a cool night. Matured in new & used French oak barrels for 15 months. A Cabernet with dense ripe red and blue lifted fruits and rich cassis and tobacco notes. Some spice mixed with earthy tones. The wine is full bodied and fruit forward with pleasing black fruit surrounding a leafy core. The tannins are fine and focused. Good cleansing acidity with an elegant but savoury finish

2006 Patrick of Coonawarra Home Block Cabernet Sauvignon. The grapes were grown at the Toccaciu Coonawarra estate, and the wine was matured for 26 months in French and American oak; while I am not a fan of ProCork, this is a very attractive wine, which has cruised through six, rising seven, years, the cassis and cedar flavours supported by very fine but persistent tannins.

Rich purple/red with a vibrant purple rim. Distinctly Margaret River; driven by aromas of blackberry, plum, bay leaf and a touch of black olive. The Merlot and Malbec add texture, balance, length and a luxurious fragrance to create a seamless and unique red. A dry, warm season was punctuated with a tropical rain event in January. This pushed back harvest and allowed for better balance during ripening. The resultant fruit had wonderful thick skins, incredible concentration and excellent varietal identity. The Cabernet was harvested late-morning, to ensure the fruit reached the winery warm to ensure a healthy, even fermentation. The Merlot and Malbec fruit was harvested during the cool of the early morning so it could be cold soaked on skins for 5 days prior to fermentation. The selectively harvested fruit was fermented over 10 days, with the Merlot and Malbec undergoing partial wild fermentation. The Cabernet remained on skins for 20 days to ensure a beautiful, vibrant colour. All elements were then matured in French oak for up to 15 months. Each individual barrel was assessed to determine which were included in the final blend.
