Geoff Merrill Henley Shiraz shows a deep brick red colour lined by cherry red hues. A whiff of the wine reveals generous scents of berry fruits and toasty French oak. Ripe fruit flavours combine with fine and powerful tannins on the full flavoured palate, to provide an elegant structure. This delightful Shiraz ends in a captivating finale. VINEYARD: Fruit is sourced from 120-year-old dry grown Shiraz vines from Martin & Joan Smiths vineyard in the Polish Hill River. Grey loam acid soils over sandstone and slate make up the profile with much of the top soil littered with rock, hinting at just how tough the vines need to be to sustain growth and produce quality fruit - not to mention the work of the vigneron to ensure overall balance. Despite growing these vines organically since their planting in the 1970s, 2012 marked the first year of NASAA Organic Certification for these vineyards. VINIFICATION: Handmade in 2 and 4-tonne fermenters, the fruit is de-stemmed and fermented using natural yeast. Hand plunged up to 4 times daily to control temperature and maximise flavour and tannin extraction. Left on skins post fermentation for 15 days, then lightly pressed and transferred to French Oak barriques for 30 months.Only 630 x 6 packs produced. COLOUR: Deep dark red brick with a slight purple tinge. BOUQUET: Concentrated with blackberry spice with hints of chocolate and cedar. PALATE: Powerful Clare Valley Shiraz with rich mid-palate fruit with long grainy tannins, oak complexity and balance of acidity. FOOD MATCH: A delightful complement to strong cheeses and gamey meats.

Paringa Estate's The Paringa Shiraz is a multi-trophy winning wine that has been carefully selected from barrels prior to bottling due to the stand-out quality that was easily identifiable. Swinney Farvie Frankland River Syrah To achieve this, the grapes are hand-harvested from 1997 planted Syrah. The fruitof which about half is whole bunchis sorted, then gravity-fed into a vat and a brace of 600L demi-muids, all French oak. Wild fermentation follows and this is evidenced in the structure, complexity and aromatic nature of the wine. There is a week and a half of time spent on skins after which the wine is basket pressed directly into large format French oak, about a third new. The wine has an unctuous elegance that caresses the palate with a structure that is exceeded only in its width by its length. Still a youthful creature, this wine will age gracefully for decades to come. A blend of Cabernet Sauvignon (57%) and Shiraz (43%). Sourced from 1971 (100%) planted on the Estate. All batches were fermented separately and blended prior to bottling. These batches of Cabernet and Shiraz represent the pinnacle wines from the Estate, our vision is to produce a seamless integration of the best of both varieties, with great aging potential. The winemaking follow suit from the previous wines, this wine is about the best blocks of the vintage and best barrels being carefully blended. Since its establishment in 1971, the Hickinbotham vineyard has become a part of Australias wine heritage, supplying fruit to produce many of Australias greatest wines. The Clarendon Vineyard has sold select parcels to Penfolds for Grange and to Hardys for their equivalent white flagship, the Eileen Hardy Chardonnay.
