Hand harvest, foot & hand stomped into the terracotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo. Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the pots, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease. Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

Dense aromas of plum pudding, dried apricots and eastern spice introduce a voluptuous palate, boasting silky tannin, delicate hints of fresh summer berries and earthier tones of toasted oak and freshly cracked allspice. Sandalford Reserve Cabernet Sauvignon is simply put, a sensational wine! Complex on the nose with violets, tomato leaf, cigar box and spice, it is beautifully structured on the palate, with rich fleshy fruit filling out the tannin backbone.

Château Cantemerle's is a fifth growth (5ème Cru Classé) Chateau located in the Haut-Medoc appellation of Bordeaux. The Chateau is situated in one of the most beautiful settings of the region, in woodlands on the outskirts of the city of Bordeaux. The wine undergoes 12-16 months maturation in 50% new French oak barriques. Chateau Cantemerles style is lively and fruit forward. The best vintages show complex aromas and flavours of black currants, plums and spice with superb freshness and plentiful fine-grained tannins.

The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

McHenry Hohnen was founded in 2004 by pioneering Margaret River winemaker (Cape Mentelle) and third-generation farmer David Hohnen and his brother-in-law, grape-grower and wine retailer Murray McHenry. With an ethos of quality over quantity, we create small lots of expressive, authentic, fine wines, says Hohnen. Three vineyards, in the central-southern part of Margaret River, are farmed organically and/or biodynamically. Laterite Hills Chardonnay is a blend of material from these family-owned and farmed vineyards -- Burnside, Calgardup and Hazels. The wine takes its name from the generally lateritic soils of Margaret River south and is made in the same way as the three single-vineyard Chardonnays. Fruit is hand picked and whole bunch pressed, before undergoing wild yeast fermentation and six months maturation in French oak barriques (20% new). The wine is then transferred to tank for a further three months maturation on lees. It is clarified but not filtered before bottling.
