The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Savoury aromatics- minerals, oatmeal and spice are layered with white peach and citrus floral aromas. Complex and enticing. TASTE Flavours of white stone fruit and pear combine with cashew nuts from the oak and a lovely textural mid palate to give complexity. The palate has a line lemon sherbet acid which gives focus and length to the wine.

Toasty whiffs with cedar and clove spice, some rich, hazelnut elements, ripe citrus, red apple and rockmelon in tow.
