Initial palate is very supple and complete, giving a lovely flow from start to finish. The importance of acidity can never be underestimated as this underpins the structure and carry. A classic, medium weight Hunter Valley Shiraz with fine long tannins with persistent length. A wine that will only build with time.

The Yalumba The Caley Cabernet & Shiraz Museum Release 2014 is a bold and elegant wine from South Australia. Expressive aromas of blackcurrants, dark berries, and subtle oak fill the nose, teasing the senses and hinting at the depth and complexity of this vintage. On the palate, rich notes of plum, blackberry, and mocha are expertly balanced with fine tannins and a touch of spice. Righteous to be called a true Barossa Shiraz; Teusner FG Shiraz is bold, packed with intense black fruits, mocha and sweet spices on the nose. Great balance in oak use, giving the wine structured tannins and extra vanilla oak flavour as the back bone on the palate. Hand picked grapes from one of the oldest vines in Barossa. This is certainly one of those wines that could impress!

Clarendon Hills is the living vision of one of the world's greatest Shiraz winemakers, Roman Bratasiuk. The dream was realised in 1990 and is now home to some of the most outstanding and hard to get single vineyard wines in Australia. The Astralis is the flagship wine in the Clarendon Hills portfolio, and while this vineyard is not treated any differently to the others, it garners the most worldwide attention due to its incredible expression and timeless elegance. From an Easterly aspect and planted on a 45 degree ascending slope, Australis has phenomenal varietal length and will repay the patient cellarer for more than 15 years.

Bahans Haut Brion is the second wine of the famous Chateau Haut Brion of Pessac Léognan and is usually excellent buying, at only a fraction of the price of its bigger brother. Fruit forwards, soft round stylish offering hints of figs, plums, black currants, cherries and minerals.. Soft with supple tannins.

Castillo Ygay Tempranillo from the famed Rioja region in Spain was one of the stars of the show at the recent Dan Murphy's Wines of the World Expo! Complex roasted chestnut/mocha/dark berry/leather fruit with superb richness, underlying savoury nuances and ripe chocolaty tannins. Although matured for 31 months in American oak, the oak and fruit integration is sublime.
