Only one litre of Soul is obtained from every 33 litres of fermented sugarcane that is processed. An un-aged non-charcoal-filtered cachaca that is stored in stainless steel vats. Pure and crystal clean, its a high grade cachaca with a distinctive bouquet.

Fine minerality and sea breeze, on the palate, the 14 months on its lees with regular stirring has created a supple wine with great depth, flavours of honey and nuts which then give way to stony complexity and a refreshing acidity on the finish.

As the vines have aged, the monopole Clos de Rougemont, from a small vineyard close to Tours, has even greater depth of flavour, and a delicious long dry finish. It is planted on pure limestone soil and vinified in barrel with a tiny proportion of new oak. A truly stellar Vouvray!

Occasionally, when rare parcels of particularly outstanding Beechworth grapes become available, Savaterre's wine maker Keppell Smith likes to create something unique, like this Chardonnay, and bottle it under Savaterre's Frere Cadet (Younger Brother) label. Brown Brothers Patricia Chardonnay is an elegant style balancing natural acidity with intense fruit flavour. Named in honour of Patricia Brown, the fruit for this exceptional white wine consists of 57% from the Brown Brothers Whitlands vineyard and the balance from Coombe Farm vineyard located in the Yarra Valley. The Yarra Valley experiences cool ripening conditions just like the Whitlands vineyard. The vineyard selection contributes to a tight style with wonderful fig and mealy characters typical of a cool climate Chardonnay.

A classic Beechworth Chardonnay, straw-gold with a green tinge: aromas of hazelnut, yellow peach, and nuances of matchstick mingled with spicy-oak notes of ginger and orange zest; the attack is full of rich, peach and nectarine fruit flavours.
