The 2014 Cuvee d'Elevage Cabernet is an outstanding expression of a northern Margaret River Cabernet. Only the best fruit parcels combined with finest French oak lead to a perfumed bouquet of Cassis, ripe berries and cedar. The complex palate shows ripe and silky tannins, pure fruit intensity with red berries and cassis. Its finely structured with long lasting finish of cigar box and vanilla. Drink now or until 2028.

Deep garnet red in colour. Intense complex aromas of dark berry fruits, green leafy herbs and a dark chariness fill the glass. The mouth is consistent with the complexity of the aromas. Dark berry fruits are quickly surrounded by savoury herbs and spices with hints of tar, complimented with fine juicy tannins which fill the mouth and a long dry minerally finish.

Medium bodied with the plush dark berry fruit framed by fine grained tannins to give a long and persistent finish.

The Hay Shed Hill Block 2 Cabernet Sauvignon displays ripe berry aromas of brilliant intensity with underlying earthen nature along with typical characters well noted from Margaret River. There is a depth here that is hard to fault, in fact its downright breathtaking. The palate itself is quite substantial, even by Western Australian standards; displaying fully ripe, fleshy sweet fruit filling the mid palate with great palate extension driven by the ripe and mature tannin.

A wonderfully elegant yet flavorsome wine bursting with red and black currants, cherry plum fruit leather with subtle undertones of violet, aniseed and subtle cigar box aromas. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
