A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Fortaleza tequila is hand-made from stone-crushed agave by Guillermo Sauza, a fifth generation Sauza family-member. The Reposado is a perfect balance of vegetal notes from fresh agave and vanilla wood from its resting in bourbon barrels.

This peaty Single Malt dates back to 1816, when John Johnston and Archibald Campbell each constructed a distillery on what today is the Lagavulin site. After Johnston died, Campbell consolidated the two, before selling it to malt merchant Alexander Graham. Today it continues to uphold the traditions of its past, using meticulous preparation to create powerful whisky. Their signature 16 year old malt has a strong peat, smoke and seaweed nose that is followed by a nutty complexity and light fruitiness. In the mouth characters of Charcoal, dry woodiness and iodine followed by chilli chocolate and a hint of toffee.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distillers Reserve single malt whisky. A no-age statement expression that captures the smoky, herbaceous characteristics of their whiskies. Both lightly-peated and heavily peated malts were used for this complex and deeply enjoyable whisky. A hint of smoke and a lovely long finish.
