Mount Horrocks Cabernet Sauvignon is the result of Stephanie Tooles expertise in finding the right balance between fruit richness and oak maturation. Beautifully marrying these two components has given birth to a poised, well-structured, and delicious wine that will keep you wanting more. The nose is a fragrant display of light herbs, fresh mint and red currant aromas with hints of cedar-like oak. The palate boasts of delightfully ripe tannins, and features red currant and other classic dark fruit flavours. This dark and inky Cabernet Sauvignon will definitely blow you away with its complexity, depth and vibrancy. It pairs very well with savoury beef, game meats and cheese.

The dark crimson hued Mitchell Sevenhill Cabernet Sauvignon exudes classic Clare Valley characteristics and flavours. This bold Cabernet Sauvignon was crafted using premium fruit parcels sourced from lush vineyards in the Margaret River wine region. The grapes were picked at perfect tannin ripeness, fermented, and aged for a period of 12 to 15 months in French oak barrels. The resulting dry red wine displays an inky red / purple colour, and exudes vibrant aromas and flavours of blackberries and dried leaves. This full flavoured palate combines with finely structured tannins to provide a textured and captivating finish. This elegant wine can be cellared for a decade from vintage. 2006 Patrick of Coonawarra Home Block Cabernet Sauvignon. The grapes were grown at the Toccaciu Coonawarra estate, and the wine was matured for 26 months in French and American oak; while I am not a fan of ProCork, this is a very attractive wine, which has cruised through six, rising seven, years, the cassis and cedar flavours supported by very fine but persistent tannins.
