Domaine Bernard Defaix Chablis Cote De Lechet

From the famed premier cru site of Cote de Lechet, this boasts an ultra elegant nose of citrus zest blossom, oyster shell, warm stone and lemon zest. A fantastic old school style of Chablis that also offers fantastic value for money for a wine at this quality level.

Brokenwood Indigo Vineyard Chardonnay

The Beechworth terroir has a distinctive fruit character of pear/peach fruit. The oak has minimal impact by using older French oak and mainly puncheons. The warm year has meant less citrus lift but has bran meal notes from the wild ferment and extended lees contact. The palate is quite rich with zesty acid line through to the finish. Drinking well now but will improve with further bottle age. Maybe leave the 2012 and 2013 for a couple more years and enjoy this in its place. Enjoy with Seafood to light meats.

WinemakingAll fruit was hand-picked and whole-bunch pressed. The cuvee taille (first cut free-run juice) was settled naturally overnight prior to racking to a mix of stainless steel tank and large format old barrels for fermentation.Fermented and aged separately in small batch lots on settled lees for nine months. The blended wine then underwent secondary fermentation in the bottle. This wine has been aged for an extended period on its autolysing yeast lees for more than four years to garner richness and complexity to its innate elegance and finesse.Winemaker's notesThe protracted growing season allowed a drawn-out ripening, resulting in an uncommon richness of flavour tempered by the abundant natural acidity contributed by the season.A bouquet of nashi pear, glazed brioche, lemon cheesecake and Amaretti buscuit. Flavours of nougat, lemon rind, jasmine and chestnut underpin a palate of steely acidity with delicated bubble, fruit weight and earthy 'sur lie' characters providing textural accompaniement, richness and creaminess to the finish. An excellent match for freshly-shucked oysters or semi-hard cow's milk cheeses.

Rieslingfreak No 1 "Grounds of Grandeur Riesling"

This wine was always designed to bring new world and old world together. After going to Bordeaux to meet the team at Boutes Barrels, John worked with the Coopers, to design a barrel that would work for Australian Riesling. They designed a 1500L barrel, which has had minimal toasting, resulting in a long barrel, which would act more has a maturation vessel, compared to a barrel which would impart oak into the wine. 2017 Rieslingfreak No.1 is made in a style which is different from any other Rieslingfreak. The wine has been wild fermented in a barrel, where as John normally ferments in stainless steel and with cultured yeast. Rieslingfreak is the inspiration of John Hughes, a man who is very passionate about his rieslings. The first vintage of the brand was in 2009, with a single vineyard Clare Valley Riesling. Since then, the label has expanded to include Eden Valley and Polish Hill River regions. The brand philosophy is to represent the hallmarks of a single region with their iconic winemaking style. Each Rieslingfreak wine is allocated an individual number. This number represents not only the region in which the fruit was grown, but also the style and technical specifications with which the wine is made. Rieslingfreak is about providing consumers with a range of specially crafted rieslings embracing both different regions and styles. It is only released from vintages considered worthy.

Jean-Marc Brocard Chablis Grand Crus Valmur

Precision, strength and freshness are words that form the signature of Brocard's winemaking philosophy. The domain is among the most important of Chablis. Brocard wines represent the higher end of expression at each quality level. The Chablis Grand Cru Valmur forms a valley which offers subtle variations in terms of exposure: one part faces northwest and the other the south. With a well-balanced mineral character, the Valmur is imposing through its strength and surprising fruitiness. The wine comprises of 100% Grand Cru chardonnay, aged in old French oak for 14 months. A multitude of flavours can be discovered, including lemon, pepper, brioche, licorice and toast with mineral strength underpinning all.

Lanson Blanc de Blancs Champagne was created by winemaker Herve Dantan, when he joined the Lanson House back in 2013. It combines the freshness style of Lanson champagnes with the delicacy of the Chardonnay. The grapes come from the best Chardonnay crus in Champagne including Oger, Cramant, Le Mesnil-sur-Oger, and Vertux. It is made with 40% reserve wines from Grands and Premiers Crus matured in Oak Cask and gets aged for 5 years in the Lanson House cellars before getting released.Lanson Blanc de Blancs is a gold luminous champagne with fine and lively bubbles. The nose reveal aromas of fine pastry, frangipane notes, candied citrus and fresh pear. On the palate this champagne is precise and generous, with flavours of candied lemon, almond, nougat and honey and a long finish.
