Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.
Underground Spirits Gin
Our uniquely cryofiltered wheat grain spirit is the starting point of this modern spin on a classic, creating our multi- award-winning gin. We work to exact precision to deliver a fine balance of juniper, coriander seeds and angelica root. Next we add our noble native botanicals including lemon myrtle, river mint, Tasmanian pepperberry and locally sourced sustainable basil, bringing the vibrant flavour of Australia to the spirit. Poppyseed, cinnamon and black pepper complete the structure. Through maceration, vapour infusion and tinctures, this is our unmistakably Australian gin.

Carefully distilled from a premium grape base, pure Tasmanian water and a unique blend of Tasmanian grown (fresh Lime and Rose) and internationally sourced botanicals (twelve total Botanicals)Layered notes of Juniper (organic), Coriander Seed, Fresh Lime. Bass & Flinders Distillery Monsoon Gin
An exotic blend of 8 botanicals including lemongrass and coriander. Tasting note: Crystal clear. Frail opening aroma gains intensity after a short breathe to yield an attractive lemongrass and coriander accented bouquet with a delicately peppery edge. An exotic amalgam of lemon grass, lozenge and a late ginger flourish makes for a delightful twist on the palate. Outstanding length. Finishes more ginger beer like. Bass & Flinders Distillery Cerise Gin
A low-key juniper style with subtle hibiscus and orange blossom aromas blended with locally sourced cherries and raspberries infused in a grape based spirit. Tasting note: Translucent pale pink. A sweet smelling spirit with lifted raspberry jube and glace cherry aromas and hints of Turkish Delight. Medium fresh entry includes raspberry tea and muted pine, sweetening with notes of raspberry sorbet, confectionary and faint juniper in the aftertaste. Balanced, tangy and warming to finish. Mountain Lapalux Oblivion Gin
Oblivion Gin is a collaborative exploration with Uk based experimental electronic artist Stuart Howard (aka Lapalux) - Resembling an Old Tom style, Oblivion Gin sits at a generous 48% abv. Juniper and Star anise give basis to a floral palate of Elderflower & Lavender, with Black Goji berries providing fruity highlights. A post-distillation addition of Butterfly pea completes the transformation to create a Gin that is uniquely inspired by the same themes of life, death and rebirth that heavily influence Stuart's music.
