Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Starting with the recipe of our multi-award winning gin, Tasmanian Pepperberry is allowed to dominate the blend before maturing in shiraz barrels sourced from local Canberra region winemakers for around two months. The results are a remarkable uniqueness of each batch derived from the individual flavour qualities of each barrel. This is an absolute modern classic with a warm and delectable finish.

Our uniquely cryofiltered wheat grain spirit is the starting point of this modern spin on a classic, creating our multi- award-winning gin. We work to exact precision to deliver a fine balance of juniper, coriander seeds and angelica root. Next we add our noble native botanicals including lemon myrtle, river mint, Tasmanian pepperberry and locally sourced sustainable basil, bringing the vibrant flavour of Australia to the spirit. Poppyseed, cinnamon and black pepper complete the structure. Through maceration, vapour infusion and tinctures, this is our unmistakably Australian gin.

Made with fresh rhubarb picked from the farms veggie patch and we also raided a few neighbours rhubarb patches as well to make this gorgeous small batch farm crafted pink gin. It makes a refreshing pink blushed G&T with a delicate tang of Rhubarb. Serve with a splash of good tonic on ice with a fresh slice of ginger or apple.

A delicious Australian elderflower GiN liqueur made using handpicked elderflowers foraged from the farm's elderberry trees during spring. Infused with the distillerys award winning Elegant Dry GiN, Australian grown sugar and the farms freshly grown lemons and rain water. Made each year in limited batches this seasonal gin liqueur is a refreshing drink to enjoy over summer.
