The 1908 block at the HVD Vineyard was hand-picked and basket pressed, with the juice cold settled for four days before fermentation began in stainless steel tanks. The fermenting juice was then transferred to French oak barriques, 30% of which were new. The wine is balanced between primary chardonnay fruit flavours and secondary flavours, derived from the minimal solids ferment and extended yeast lees contact, resulting in this wine's texture and mouthfeel. Aromas of meyer lemon, nectarine and jasmine. Flavors of yellow plum, dAnjou pear, tangerine and toasted hazelnut. Richly textured, velvety and concentrated with balanced acidity and subtle toast. The fruit was hand-picked, whole cluster pressed and settled for twenty four hours before being racked to barrel for fermentation. Fifteen percent of the lot was co-inoculated with a house strain of malolactic bacteria; these barrels were then used to top the remainder of the lot during post primary fermentation. The lees were stirred 1-2 times per month and the wine was aged for nine months. Over 30 years of experience working with chardonnay and pinot noir have established La Crema as a winery of consistent quality. La Crema produces wines from top cool-climate appellations to include; Russian River Valley, Sonoma Coast, Monterey and most recently Willamette. The unifying factors of all these sites are their cool, windy climates and marine-based soils. La Crema's vineyards are all harvested by hand in the cooler morning hours. The winemaking techniques are primarily traditional with modern enhancements to ensure that the wines are true to both the variety and the terroir. Chardonnays are whole-cluster pressed and fermented and aged in French oak on the lees with bi-monthly battonage to add texture and complexity. The Pinot Noirs are cold soaked for five to eight days before fermentation in small, open-top fermenters and aged in a combination of new and used French oak barrels. As with the Chardonnay, La Crema's Pinot Noirs are pure, accurate and reflective of their origin. Outstanding vineyard sources, limited yields and artisanal wine making produce wines that receive high acclaim.

Precision, strength and freshness are words that form the signature of Brocard's winemaking philosophy. The domain is among the most important of Chablis. Brocard wines represent the higher end of expression at each quality level. The Chablis Grand Cru Valmur forms a valley which offers subtle variations in terms of exposure: one part faces northwest and the other the south. With a well-balanced mineral character, the Valmur is imposing through its strength and surprising fruitiness. The wine comprises of 100% Grand Cru chardonnay, aged in old French oak for 14 months. A multitude of flavours can be discovered, including lemon, pepper, brioche, licorice and toast with mineral strength underpinning all.

From the esteemed house of Jean-Marc Brocard, the Premier Cru Vau de Vey vines cling on to a very steep slope. Located on the left bank of the Serein River and facing East, this terroir provides rich and delicate wines with a marked minerality. 100% Premier Cru chardonnay, fermented using natural yeast, then aged in 50% stainless steel and 50% old French oak for 14 months. The wine is a pale gold-green colour. A tangy, clear and precise wine with wonderful intensity of zesty orchard fruit - energetic, with tremendous drive.

Chardonnay coming from the Bizot Vineyard in the Piccadilly Valley (Adelaide Hills), planted in 1996 at 500M altitude. Hand harvested (clones 76 and 95) on 1 March 2016 and whole bunch pressed (low yields of just 487.5L per tonne). Method Classic - first fermentation and ageing on full lees in old oak for 10 months, second fermentation and ageing in bottle on lees for 42 months. Disgorged September 2020.
