Pure aromas are reminiscent of fresh apricots, lifted ginger, saffron and fresh white flowers. This wine will continue to grow and develop in the bottle, firstly showing enhanced apricots and spice, then after a couple of years developing honey flavours and toast complexity. After harvest, 60% of the fruit was gently pressed directly into old French oak barriques and puncheons and the remainder into stainless steel tanks. The juice was allowed to passively interact with the air, oxidising out any bitter phenolics and creating a perfect environment for the wild yeasts, natural to the vineyard, to begin fermentation. The wine was left on lees which, with regular bâtonnage for 10 months, increased the complexity and creaminess of the wine and further heightened the palate weight. Chief winemaker Louisa Rose directs the winery in a style of their own. It incorporates unique elements such as a grape vine nursery and on site cooperage. Samuel named the patch Yalumba, an aboriginal word meaning all the land around. Five generations and 160 years later, Yalumba has grown in size and stature to become Australia's oldest family owned winery. Yalumba is now run by fifth generation descendant, Robert Hill-Smith and family. Robert was appointed Managing Director of Yalumba in 1985. Head Wines was started in 2006 by Alex Head. Each Head wine shows a distinctive house style of powerful fruit weight, elegance, freshness, finesse and balance which starts by farming vineyards sustainably and in some cases using organics and biodynamics.

The fruit was entirely hand-harvested and allowed 6 hours skin contact in the press before fermentation was carried out at cool temperatures to maximise fruit expression. This wine shows all the hallmarks of easy-going, classic Italian Pinot Grigio; subtle grapefruit and underlying floral and spice notes on the nose followed by citrus and peach flavours bound together by a tight minerality.

This is a very fine Gris. Its elegant nose shows hints of citrus, grapefruit, musk and apricot while on the palate the wine is structured and remarkably tight with mineral characteristics supporting rich, tropical fruit. The acid is very fresh and the length impeccable.

Conceived as a white wine development program, the Bin 51 Riesling soon became one of Penfolds' star performers. Eden Valley is an obvious choice of region for Riesling due to the higher altitude and cool climate. The wine offers delicate aromas of fresh cut apples and pears with a twist of lemon and minerality towards the end. A great deal of fruits and acidity makes for an interesting white wine with propensity to age gracefully if carefully cellared.
