Our Tempranillo grapes are grown on our vineyard in Markwood and the 2019 vintage has proven to be an excellent year for the Spanish varietal. Our Pinot Gris grapes are grown in the Whitlands region of North East Victoria with high elevation that suits Pinot Gris variety. Our production follows the traditional French styling which results in a fresh, crisp palate with honey and pear characters.The grapes are whole bunch pressed gently to avoid picking up colour and any bitterness. The juice is fermented to dryness in a stainless steel tank and then bottled soon after it finishes settling.

Col Fondo Prosecco undergoes secondary fermentation in bottle and isnt disgorged. The flavoursome leesy sediment dances on the bottom, hence col fondo, literally meaning from the bottom. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.
