Pale salmon in colour with the nose showing subtle red berries sitting above a yeasty/toasty base. Great mouthfeel withfresh stone fruit characters, fine tracer bubbles, balanced acidity and finishing with chewy tannins.

Giant Steps plays it's part in the rapid accension of Australian Chardonnay back to the position it once held here. That being of the king of white varieties. This is a very stylish numbe from Phil Sexton and his team. Stonefruit, melon and butterscotch characters are supported by vanillin oak and the palate is long and textured with a clean crisp finish.

Rosé - Raspberry, strawberry and cream nose with hints of blood orange.Palate entry is fresh with a creamy texture, strawberry fruit and a hint if kirsch.

Levantine Hill Syrah has lifted complex aromas of dusty red berries, musk, cardamom and white pepper and vanillin oak. The elegant medium-bodied palate abounds with spice and earthy nuances in a concentration of savouriness. The silky ripe tannins have been deftly integrated with the underlying oak providing carriage for the fruit weight and lingering flavours to a pronounced and persistent finish.

Chandon Vintage Brut is a fine elegant sparkling produced from grapes sourced from multiple cool-climate regions, with a slant towards quality Yarra Valley fruit. A reductive, flinty aroma overlays quince, nashi pear, pine nut, citrus blossom and lemon zest. Toasty brioche and chalky mineral aromas present in the background. An excellent palate, with primary fruits of tangy lemon and kaffir lime, backed up by secondary flavours of fresh pastry. Tightly wound acidity with remarkable freshness.

Applejack Vineyard was planted by highly respected viticulturist Ray Guerin and is managed by his son Mark. This vineyard is situated in the Upper Yarra Valley to the south east of the traditional valley floor. The higher altitudes result in cooler growing conditions, despite the westerly aspect. The distinctive dark-red volcanic loam soil is a distinguishing feature of the vineyard. Applejack Vineyard is located on a dramatic slope and is close planted and meticulously managed. The De Bortoli Windy Peak Chardonnay is vibrant yellow with green hues, shows fig-like fruit aromas with barrel ferment characters. The full flavoured palate of melon and fig has great mouth feel and texture.
