The name 'Nunc Tempus Est', meaning 'Now is the time', reflects the moment when this remarkable wine has come to fruition. The grapes for this wine were handpicked in the cool of the morning, gently pressed, and fermented under careful conditions to preserve the freshness and purity of the fruit. Highly perfumed with lavender, green olives in brine, mastic verging on the smell of just-cut raw pine wood. There’s a lot going here: textural with barely ripe Packham pears, raw quince flavour and phenolics with a slip of creaminess. Green apple, apricot, green pear, lemon myrtle and honey, a coverlet of spicy oak. It's juicy, lots of flavour here, but tight too, and the texture is excellent offering some chalky grip and glossy feel, and it sports a cinch of dried herb and quinine bitterness on a long finish. Cullen Cabernet Merlot
Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.
Lenton Brae Southside Chardonnay
The Lenton Brae Southside Chardonnay plays off the already established Wilyabrup Chardonnay with a fresh, vibrant feel to the wine. A cleansing line of acid is evident throughout the palate as is the textured mouthfeel courtesy of 'wild' primary fermentation and the addition of quality oak to the process. Designed to be enjoyed in its youth, this classic Margaret River Chardonnay will also enjoy some short to medium-term cellaring to coax out its true essence.
