Each bottle is deliberately and meticulously created: from the delicate balance tasted within each glass, to the small touches of family handwriting and messages on our labels.Light salmon-pink hues, this wine is fresh and floral with hints of red berries. Its a lovely start to a conversation crisp, delicate red fruits, elegantly sophisticated and lingering.We use 82 per cent cabernet franc and 18 per cent merlot. We wanted to produce the best rosé we could, and chose to make one in the style of a Chinon cabernet franc rosé of the Loire Valley in France, which are among the greatest rosé wines.Its delicious on its own, and versatile as it pairs well with everything from delicately prepared seafood to sweet roast duck.
Wills Domain Cuvee d' Elevage Rose Non-Vintage
The wine is immediately appealing on the nose showing brightly fruited notes of lemon peel, white fleshy nectarine and grapefruit with a subtle touch of sweet basil leaves. It is juicy and vibrant on the palate with youthful fruit intensity together with crisp acidity, finishing long and mouth-watering.
Atticus Syrah
Hand Picked- Matured for 18 months in French oak (50%new). Brilliant crinmson-purple; a very complex wine on the bouquet and medium to full-bodied palate alike; the new oak certainly plays role, but it's the spice black fruit and fine tannins that build the perfect platform for a wine with avery long future.
Atticus Chardonnay
Very small quantities of this wine made unfortunately. The wine is tight and intense which will ensure it ages well, some citrus to compliment the stone fruit and fine oak. Finishing with beautiful length and natural acid.
Atticus Finch Red Blend
Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.
Atticus Cabernet Sauvignon
Beautiful seasonal conditions. The wine is loaded with lovely ripe fruit characters displaying classic varietal flavours. The palate is balanced and structured with strong mid palate fruit and fine tannins. A near perfect season with blackcurrant, mulberry and cassis seamlessly woven with French oak and supple tannins.

Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.
