Penfolds Bin 707

Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.

Chateau Latour 1er cru classe

The formidable fortress depicted on the famed vanilla Latour label was built to withstand the Gironde pirate attacks of the 15th Century. And, truly, as well as the tower still stands, so does Latour and its consistent excellence regardless of vintage. Nominally Pauillac, this First Growth sits almost astride the border of St. Julien and its output as one would expect is dominated by Cabernet Sauvignon with 10 per cent awarded to both Merlot and Cabernet Franc. Any experience with Latour is to be savoured with patience this notoriously slow-developing wine requires at least a decade or twos development. But the reward for this patience is a fulsome melange of power, finesse, depth and tone.

Chateau Lafleur

Château Lafleur is a tiny 4.5-hectare Pomerol property located opposite Pétrus and producing wines of comparable quality. It is owned and run by Sylvie and Jacques Guinadeau. While the majority of great Bordeaux châteaux have changed hands over the past several generations, Château Lafleur remains in the same family hands to this day. Its vineyards are situated on the gravel-rich Pomerol plateau and adjoin those of La Fleur-Pétrus. The soils here are particularly deep and are enriched by deposits of potassium and iron. Only natural fertilisers are used and yields are painfully low, even by Pomerol standards. Lafleur's wine is typically a blend of Merlot (50%) and Cabernet Franc (50%). It is aged in small oak barrels (50% new) for 18 months. Wines from Lafleur display a spectacularly intense perfume (partly attributable to the high percentage of Cabernet Franc in the blend) and display layers and layers of concentrated, black fruits, minerals, tobacco spices and creamy liquorice on the palate. The best vintages can last for up to 50 years.

France's Bordeaux, is the spiritual home of the Cabernet family of grapes, which extends beyond Sauvignon and Franc to Merlot, Malbec and Petit Verdot. If you love Margaret River Cabernet blends, or indeed the Merlot dominant reds of Hawkes Bay, NZ, then you must look at the wines upon which many of them have been modelled. This wine is Cabernet and Merlot, deep and rich, cassis and earthy cedar, structure and uncommon length - all hallmarks of Grand Cru Bordeaux.

Opus One Cabernet Blend

Opus One is the coming together of two of the world's supreme wine figures, Baron Philippe de Rothschild and Robert Mondavi. Opus One began its life in 1979 when Château Mouton Rothschild winemaker Lucien Sionneau and Robert Mondavi's son, Timothy made the partnership's first vintage. Their goal was to create a wine of unparalleled quality that reflected the traditions of both houses. The wine is French in style, but Californian in substance, Opus One is produced with the utmost attention to detail. The 2006 Opus One is a traditional Bordeaux style blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. The wine shows saturated black fruit concentration with flecks of purple in the glass. The nose is one of dark chocolate, blackberry, smallgoods and rose petal. In the mouth, flavours of cassis and coffee with robust plum and cherry are only a small taste of how great this wine will become with careful cellaring.</p>
