Penfolds Bin 707
Bin 707 is a Cabernet Sauvignon reflection of Grange, intensely-flavoured fruit, completion of fermentation and maturation in new oak, expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 when fruit was directed to other wines, nor in 1981, 1995, 2000, 2003 or 2011 (when fruit of the required style and quality was not available). Full bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australias finest Cabernets.
Chateau Lafite-Rothschild 1er cru classe
One of the most famous - as well as one of the most expensive - wines in the world, Chateau Lafite Rothschilds history dates back to 1235, by which time, it is believed, the vines were already planted and thriving. Nearly 1,000 years later it still retains the name of its then-owner Gombaud de Lafite. It wasnt until 1868 that the Rothschilds came to become the Chateaus owners, after it was sold at public auction in Paris - and it remains in their hands today. Producing an elegant Paulliac wine, Chateau Lafite is renowned for its characteristic blend of rich dark fruit with spicy, savoury and earthy notes of cassis, tobacco, and truffle. The 2016 earned sterling reviews, with James Suckling scoring it a perfect 100 and speculating on its standing as Perhaps the greatest Lafite since the legendary 1959.
Opus One Cabernet Blend
Opus One is the coming together of two of the world's supreme wine figures, Baron Philippe de Rothschild and Robert Mondavi. Opus One began its life in 1979 when Château Mouton Rothschild winemaker Lucien Sionneau and Robert Mondavi's son, Timothy made the partnership's first vintage. Their goal was to create a wine of unparalleled quality that reflected the traditions of both houses. The wine is French in style, but Californian in substance, Opus One is produced with the utmost attention to detail. The 2006 Opus One is a traditional Bordeaux style blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec. The wine shows saturated black fruit concentration with flecks of purple in the glass. The nose is one of dark chocolate, blackberry, smallgoods and rose petal. In the mouth, flavours of cassis and coffee with robust plum and cherry are only a small taste of how great this wine will become with careful cellaring.</p>

Maker Domaine Sylvain Cathiard is one of Burgundy’s most revered and meticulously run estates. The domaine traces its roots back to Sylvain Cathiard’s grandfather, who founded the estate in the 1930s, with Sylvain’s father, André, expanding it further. In 1985, Sylvain took over the domaine, followed by the addition of his son, Sebastien, in 2006. Today, Sebastien runs the domaine, having built upon the legacy of his forefathers, and brings a fresh perspective that has elevated the domaine’s wines to global recognition. The estate spans 5 hectares across Burgundy’s most prestigious appellations, including Vosne-Romanée, Nuits-Saint-Georges, Chambolle-Musigny, and a small parcel in Romanée-St-Vivant, one of Burgundy's rarest Grand Cru sites. Sebastien and his wife, along with a small dedicated team, carry out all vineyard work with meticulous care. The domaine practices organic viticulture, although they have not sought formal certification. Sebastien’s hands-off approach to winemaking respects the natural processes, employing native yeasts for fermentation and aging the wines in oak barrels sourced from Tonellerie Remond and François Frères. Chateau Latour Pauillac Premier Grand Cru Classé
Château Latour is situated in the heart of the Médoc wine region, about 50 km north-west of Bordeaux, where the legend of the vineyards of Bordeaux began. The Château’s prime terroir, l’Enclos, overlooks the Gironde Estuary which, over the centuries, has given the vineyard its geological complexity and, on a daily basis, ensures a mild climate. In the years since 1993, under the leadership of the Pinault family, the estate’s owner, significant changes have been made with a view to maintaining Château Latour’s pursuit of excellence in the wines that it produces. Dark ruby in colour with a very elegant nose with beautiful aromatic purity. Generous and powerful on the palate with a velvety mouthfeel, full of silky tannins. Brimming with energy, the finale is superbly precise with fabulous length.
