Fermentation in new French oak barriques using natural yeast provided Margan White Label Chardonnay its pale lemon colour. The wine's bouquet is a compilation of white nectarine, grapefruit, struck match and cedar spice aromas. The palate of this modern Australian Chardonnay is lush with flavours of green apple, white peach and flint. Subtle influences of oak and sharp acidity give line and length to the finish. This white varietal can be enjoyed with crispy pork belly or mushroom risotto.

Jim from Mount Pleasant accentuates a Shiraz with a cleanly structured mulberry and redcurrant with soft liquorice notes and a persistent high quality backbone.

This is a rich red wine displaying layers of red and blue fruits that are well complemented by sweetness ands tructure from the oak barrels. David Hook's Shiraz is medium bodied, some vibrant characters of spicy red berries and soft rounding tannins with hints of vanilla oak on the palate. Ripe fruits richness with a lengthy finish. A great number to have handy when friends drop by.

The intention with this wine is to deliver a modern style of Hunter Semillon which offers outstanding early drinking appeal in combination with an ability to age over the short to medium term. The frame is still fine, but the flavours are more generous. Try with Sydney Rock Oysters!
