Levantine Hill Katherine's Paddock Chardonnay
This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Devil's Lair have been leaders in producing some of Margaret River's, if not Australia's, best and well-balanced Chardonnays. Now they have decided to take it to the next stage and release their first single vineyard estate Chardonnay. This wine is a triumph of both winemaking and viticulture - a perfect balance has been achieved between toasty complexity with an almost unctuous feel along with a level of restraint and purity. Almost like the wine has been cinched in with perfectly placed pleats.
Penfolds Bin 51 Riesling
Conceived as a white wine development program, the Bin 51 Riesling soon became one of Penfolds' star performers. Eden Valley is an obvious choice of region for Riesling due to the higher altitude and cool climate. The wine offers delicate aromas of fresh cut apples and pears with a twist of lemon and minerality towards the end. A great deal of fruits and acidity makes for an interesting white wine with propensity to age gracefully if carefully cellared.

Two Paddocks Proprietor's Reserve Last Chance Pinot Noir
The Last Chance is a beautifully sited small terrace perched above the Earnscleugh Valley, carefully planted with well-tended Burgundian clone pinot noir. It is one of a small cluster of the worlds most southerly vineyards and takes its name from the watercourse that runs through its heart, hand-dug by gold miners in the 1860s The Last Chance. The soils are raw schist gravels. The Last Chance Pinot Noir is hand picked and sorted in the vineyard. One-third whole-bunch natural fermentation in a 3.5 tonne wooden vat. Five-day cold soak. Post fermentation transferred to medium and light toast French barriques for 11 months maturation. One-third new wood and the balance in second and third fill barrels. Light filtration prior to bottling. The Lasdt Chance Pinot Noir typically shows thyme, wild flower, red fruit and spiciness on the nose leading to a complex palate showing great coverage, elegance and length.
