The Italian grape, Fiano, is one of Australia's key alternate grape varieties. It is perfectly suited to the climate of the Hunter Valley. An unwooded style, the wine has intense varietal characteristics with aromas of pear and spice. The palate is perfectly balanced between fruit intensity and textural elements from the solids ferment, with a brisk acidity. A food friendly wine ready for immediate enjoyment. Tulloch Verdelho is an exciting aromatic white that was harvested at night to retain the fresh natural acidity found in the quality fruit. The wine itself has honeydew melon notes with a real citrus blossom lift. The long, engaging palate has a real zest to it with a fine acid backbone treating the drinker with a long, crisp finish.

The intention with this wine is to deliver a modern style of Hunter Semillon which offers outstanding early drinking appeal in combination with an ability to age over the short to medium term. The frame is still fine, but the flavours are more generous. Try with Sydney Rock Oysters!

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. The classic and seamless blend has profusion of flavour and a refreshing crisp finish. Fish Cage wines are vibrant, fun and and easy escape. We are often asked, "Why is there a fish in the cage?" Entirely sourced from Tyrrell's famous HVD vineyard. These dry grown blocks were planted in 1984 and 2003 and together they produce a modern style that has both richness and finesse.

This Semillon from a sustainably farmed vineyard in the Hunter Valley region was hand picked from 40 year old Semillon vines. The grapes were then fermented with skins, pressed, and barrel aged for 3 months in old Chardonnay French oak. There was no additions, fining or filtration of the wine when bottled. The result is a textural, juicy wine with a zesty dry finish, with flavours of mandarin marmalade and a hint of lemon.

The grapesfor this wine were picked from our 40 year old vines grown in the volcanic soilof the ancient Fordwich Sill. These low yielding mature vines produce ripe, concentrated fruitwhich results in a wine with excellent regional and varietal characters.
