The blocks integrate seamlessly to produce a wine portraying the gradually shortening days, the subtle look of Autumn and the gently rolling sandy loam landscape draped in morning fog in which it's grow. Partial carbonic maceration adds a floral lift to the wine with subtle earthiness and fresh strawberry notes while a portion of whole bunch gives structure and spice while maintaining the vibrancy and varietal character of Pinot Noir.

Hilary Adelaide Hills Chardonnay is a thoroughly modern and elegant Australian Chardonnay that offers a creamy style with subtle flavours and approachable character. The restrained use of oak balances the quintessential Adelaide Hills fruit character.Quintessential Adelaide Hills with white nectarine, lemon curd and hazelnut aromas, and underlying mineral characters in the background. Palate shows restraint with a nougat and creamy elegance. Subtle flavours along with the typical regional acid line bring freshness and length.

Handpicked and chilled for 16 hours before whole bunch press. Gently pressed directly to old French oak. Slow ferment 10 -12 days and kept on full solids for the life of the wine. Post fermentation, barrels were stirred weekly for 8 weeks. 6 months on full solids before bottling in October.
