Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.

Medium straw with a very slight green tinge Subtle melon, with a complex aroma of cashews and brioche Lovely, rich, and soft lingering. The mid-palate is fruity and creamy with a fresh zesty acidity.

Pale straw in colour. Estate-grown Chardonnay displaying elegant notes of white peach, grapefruit, and floral characters. A complex, textural palate with fine oak tannins providing great structure.

Picardy Chardonnay from Western Australia's emerging region of Pemberton is a beautifully crafted wine; melon, stone fruit and grapefruit in a Burgundian style with the influence of quality oak.

Barrel fermentation and maturation in French oak barriques with partial malolactic has imparted texture and complexity to the minerally grapefruit flavours of this Chardonnay from WA's south-west corner.

Yarra Yering, well known for their pristine and elegant red wines, also make one of the Yarra Valley's premier Chardonnays. Made solely from the original 1969 plantings, the Yarra Yering Chardonnay is fermented traditionally in open top fermenters and crafted to age in bottle for extended periods. The wine goes through 100% malolactic fermentation which adds complexity and roundness without foregoing natural acidity and structure. Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

A classic Beechworth Chardonnay, straw-gold with a green tinge: aromas of hazelnut, yellow peach, and nuances of matchstick mingled with spicy-oak notes of ginger and orange zest; the attack is full of rich, peach and nectarine fruit flavours.

This Bourgogne Blanc comes from parcels situated exclusively within the Meursault commune and bordering the land classified as Appellation Meursault Villages. The soil is a clay limestone mix and the subsoil is gravel. As with our Villages and Premiers Crus parcels, the soil is ploughed and partially grassed. The wine-making and maturing processes are identical to those of our Villages and Premiers Crus wines.

The aspiration of Oakridge LVS -- or Local Vineyard Series -- wines is to be outstanding expressions of single vineyards within the Yarra Valley. Local Vineyard Series wines enable wine lovers to compare and contrast the power of terroir and geography in winemaking. In essence, different grape varieties thrive in different soils, and Yarra Valley terroirs and altitudes vary widely. Oakridges expertise and understanding of the region allows viticulturists and winemakers to match a particular variety with a particular site -- with marvellous results. Almost all LVS wines are cellarworthy. The Willowlake Vineyard is just outside Gladysdale in Victorias Upper Yarra Valley. Planted in 1979 at an elevation 300 metres, the cool-grown Chardonnay here ranks with the regions very best.
