Vasse Felix produces fine Margaret River reds with great balance and style. This traditional blend of Shiraz and Cabernet Sauvignon shows sweet mid-palate fruit with liquorice and spice and good tannin structure. Fantastic French oak integration enabling soft tannin complexity and a lovely length of flavour.

This Cabernet Merlot exhibits ripe cassis, dark chocolate and licorice aromas. High notes of cedary oak and bay leaf add further complexity. The palate unfolds in a myriad of layers of ripe blackcurrant and red fruit interwoven with savoury oak. The long and flavoursome finish is well supported by dry and fine grained tannins.

This stunning blend combines Cabernet with its dark fruits, bright cassis, hints of dried herbs whilst the Merlot subtly brings plush blue fruits and warmth, surrounded by supple tannins and neatly integrated oak.

The Regional Series from Capel Vale showcase grape varieties and their most suited regions. This example of Margaret River Cabernet has all the traditional flavours of blackcurrent, bay leaf and a hint of cigar box.

Grape variety - 89% Cabernet Sauvignon, 8% Cabernet Franc, 3% Petit Verdot. Oak maturation - 100% of the wine is aged in French oak barriques (20% new) for 15 months. Colour - Deep red with purple hue. Aroma - Ripe with dark fruit characters and toasty-cedar oak. The wine opens with mulberry, currant and blackberry with underlying complexity from bay leaf, gravel dust and subtle perfume. Palate - Full with a soft supple texture and fine tannins. Once again there are ripe fruit characters of mulberry, blackberry and boysenberry with cedar oak, bay leaf and lavender. The wine has a long soft finish. Food matches - Meat dishes, saucy pastas and cheeses. Peak drinking - Drinking well now but will develop further over the next 5 to 8 years.

Redolent in ripe cassis and dark chocolate aromas, the palate is long and structured with perfect poise and balance.

Employing elements of appassimento—inspired by the wines of Valpolicella—this is a fascinating Cabernet, totally different to anything we know of on the market. It comes from two blocks in the Blind Corner Quindalup vineyard, where the soils are sand over pea gravel with a granite base. The fruit was fermented naturally with no acid additions or fining. Maturation occurred in mature oak. A portion of the ferment was first air-dried before fermentation (appassimento), a process intended to soften and lengthen the wine’s tannic frame while adding layers of flavour complexity.
