The wine displays fresh green tinges to a very pale straw colour. The Hay Shed Hill vineyard is situated on a picturesque property that was established as a group settlement farm for returned soldiers from the First World War. Known as Sussex Vale the property was originally a dairy farm. The current homestead, considerably renovated, still has much of the original Group Settlement look and feel. Vines were first planted in the early 1970s. In the late 1980s the vineyard was bought by the Morrison Family and the wine brand Hay Shed Hill was established taking its name from the local reference to the hay shed located on the property. The sister label, Pitchfork, was developed to complement the single vineyard Hay Shed Hill label. A series of ownership changes saw numerous alterations to labels, wine style and distribution until the current group of partners bought back the farm and the brand in late 2006 and returned to the original concept of producing wine with integrity that expresses the quality of the site.

This Deep Wood wine displays ripe berries and cassis aromas with distinctive cedary oak and crush mint leave. On the palate, this Cabernet Sauvignon and Merlot blend, unfolds in the complex layers of red fruit with black olive nuances further enhanced by subtle savoury oak. The fine tannins gives it a great lengthy finish. A wine, which will be enjoyable now over dinner with family and friends. Or provided with an ideal cellaring condition, this Deep Wood Cabernet blend will blossom further up to five to seven years.

A unique expression of the Margaret River, Deep Woods Hillside Cabernet Merlot exhibits aromas of cassis and dried herbs. The palate is a rich mixture of red and black berries and is medium bodied with elegant silky tannins. Great length with a touch of sweet spice and dark chocolate notes.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate.
