Ring Bolt Cabernet Sauvignon
A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Master Margaret River winemaker, Cliff Royale, has done it again with this superb new release. The fruit is sourced here from three regional sub districts and matured in old French oak for roughly 12 months. It's a brilliant drink right now, soft in structure with a pristine fruit profile, particularly with the likes of chargrilled lamb chops.

Margaret River is renowned for its stylish Sauvignon Blanc Semillons. This 2017 SBS is fresh and clean emanating from a multi star rated Halliday Winery. Enjoy. VARIETY 58% Sauvignon Blanc, 42% SemillonØ REGION Margaret RiverØ COLOUR Pale StrawØ AROMA Intense gooseberry and guava notes highlighted by fresh citrus overtonesØ PALATE Full, fresh, crisp palate, with well balanced acidity. Dominated by the tropical fruit flavours that linger on the palate with a zesty citrus finishØ WINEMAKING Fruit picked cold in the coolness of the night. Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was destemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with the idea to maximise it s potential prior to blending. Blending took place to maximise the freshness and zestiness of the Sauvignon Blanc but to also allow the creaminess and texture of the Semillon to give the wine some back boneØ TYPICAL ANALYSIS 12.7% AlcoholØ FOOD MATCHING Seafood, chicken and pasta.

Ø VARIETY 100% Cabernet SauvignonØ REGION Margaret River Yallingup Sub-RegionØ COLOUR Deep garnet redØ OAK MATURATION 18 months in a selection of fine grained French oak barriques from specially chosen forests. 50% new oak; 30% 1 year old and 20% 2 year old barrels. The Malbec is barrel fermented in 500 litre puncheons.Ø AROMA Lifted red berry and cedarØ PALATE Elegant natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.

Devil's Lair Wines Cabernet Sauvignon
Devil’s Lair Cabernet Sauvignon is complex and layered, characteristic Margaret River lively aromas, fine tannins and subtle oak characteristics. The Devil’s Lair Cabernet shows primary blackberry fruit aromas with a deep core of dark cassis, ironstone minerality and abundant yet supple tannins. The fruit is the work of Viticulturist Simon Robertson who has guided growing at Devil’s Lair vineyards for more than 20 years. The wine spends more than a year on 100% French oak both old and new.
