Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Shiraz & Cabernet Sauvignon is another match that delivers something greater than the sum of its parts. Blend the rich upfront flavour and a lingering aftertaste of Cabernet, with the silky softness consistency of Shiraz, add a splash of Merlot, and you have a Rouge of super delicious deliciousness. This blend has been simply foot-crushed, hand-plunged during wild ferment and basket pressed to old oak for some sleepy time. The Cabernet, Shiraz & Merlot are all from our Quindalup vineyard.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate. Bursting lemon, lime and grapefruit dominate throughout with bright acidity, a slightly savoury line and a talc-like finish.

Wonderful garnet red colour showing aromas of red and blackberries and cedar on the nose. Rich forest fruits and licks of vanillin oak on the palate. Hand plunged in open topped fermenters, with nine months in seasoned French oak barriques.

Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.

The perfume is driven by a combination of violets, ripe cherries and cedar notes. A powerful palate of plums, black currants andnuances of bay leaf. Food Matches: rack of lamb, roasted vegetable lasagne ora juicy rib-eye steak. Peak drinking: Ready to enjoy on release but cellaring upto 10 years from vintage will find further complexity.

Elegant flavours of dark cherry and star anise are supported by sweet tannins, the typical line and length of this variety enhanced by a fine backbone of cedary mocha oak.
