With this Umeshu, very ripe (Kanjuku) Ume fruit is infused into Shochu which is produced from rice at the brewery. This Umeshu has a perfumed character on the nose with hints of rose petal, marzipan and apricot. It has a rich texture with cleansing acidity with great length.

Released with bottle age this is a wine which will still continue to evolve over many years the toasty lemony flavours becoming richer and more intense. A classic benchmark Hunter Semillon, it has earned its place in the Langtons Classification of Australian Wine.

Lark Hill have been the pioneers of this traditional Austrian variety. It was back in 2002 when Jancis Robinson visited the vineyards and stated that Lark Hill was the perfect place to grow Grüner Veltliner due to its overall terroir. With links to bio-dynaimc farming already being established, Chris Carpenter thought it was the obvious connection to begin making Grüner. Stonefruits and ruby grapefruit with grilled nuts, owing no doubt to Simmonet-Febvre's insistence on ageing their Premier-Cru wines on lees for over a year. Fine minerality and sea breeze, on the palate, the 14 months on its lees with regular stirring has created a supple wine with great depth, flavours of honey and nuts which then give way to stony complexity and a refreshing acidity on the finish.

Akashi whisky is the only whisky in the world that is made by a Toji (grand-master in the art of sake making) by implementing sake-making methodologies into the whisky making process. The distil pot used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an ageing process, while its core malt (cask strength) is smooth and delicate.

Occasionally, when rare parcels of particularly outstanding Beechworth grapes become available, Savaterre's wine maker Keppell Smith likes to create something unique, like this Chardonnay, and bottle it under Savaterre's Frere Cadet (Younger Brother) label.
