This is a lightly oaked Chardonnay matured in old French oak. The oak maturation has given the wine zesty aromas of stone and citrus fruits. These fragrances are followed by abundant nectarine and peach on the palate, which end in a crisp and clean finish. Fermentation by both cultured and wild yeasts has added texture and complexity to the drink.

Chardonnay coming from the Bizot Vineyard in the Piccadilly Valley (Adelaide Hills), planted in 1996 at 500M altitude. Hand harvested (clones 76 and 95) on 1 March 2016 and whole bunch pressed (low yields of just 487.5L per tonne).
