This wine consumes your senses with blackberry, liquorice, tobacco leaf, black olive, Christmas pudding, earth and hints of oak and pepper. The grapes were picked in the cool of the early morning, crushed and pressed after a short period on skins to extract colour. Part of the blend was cold settled, and part was stirred on juice lees with protective yeast to enhance fruit flavour and texture. After these processes were complete, juices were clarified, and the wine was fermented at a cool temperature using a yeast specifically used for expressive Rosé wines over 14 days. After fermentation, the wine was matured on gross lees for a short period to gain additional texture before fining, filtration, and bottling. Medium pink with a salmon hue. Fragrant and expressive, lifted aromas of strawberries, white cherries, and a delicate floral thread of rose petals and orange blossom. Dry and medium-bodied, the palate is juicy yet elegant. Ripe red fruits, raspberry and watermelon, supported by a generous mid palate and a gentle hint of strawberry cream texture. Preferably enjoyed alongside grilled squid, charcuterie, or a summer heirloom tomato salad with burrata and basil.
