Brown Brothers Patricia Chardonnay is an elegant style balancing natural acidity with intense fruit flavour. Named in honour of Patricia Brown, the fruit for this exceptional white wine consists of 57% from the Brown Brothers Whitlands vineyard and the balance from Coombe Farm vineyard located in the Yarra Valley. The Yarra Valley experiences cool ripening conditions just like the Whitlands vineyard. The vineyard selection contributes to a tight style with wonderful fig and mealy characters typical of a cool climate Chardonnay.

Yabby Lake Chardonnay has a lifted and fine nose, which is complex and beguiling. The palate is fine and tightly wound together with a precise mineral intensity. Great length and poise, the wine finishes with great purity. Stored carefully this wine will age gracefully for at least eight years. The grapes used to craft Credaro 1000 Crowns Chardonnay were handpicked and whole bunch pressed. The juice obtained was directly run off into barrels, and wild fermented with yeasts. This led to the creation of a pale straw coloured wine with a deep green rim. The perfumed nose exudes scintillating aromas of white peach, pear, nougat and citrus. This delightful Chardonnay is smooth and juicy on the palate, brimming with flavours of stone fruit, grapefruit and citrus blossom. The aromas and flavours are supported by a fine and delicate layer of mineral acidity, offering a creamy texture and a lingering finish. This medium to full bodied white wine has the potential to be cellared for 5 to 8 years from vintage, tasting wonderful with grilled fish, pumpkin pie and creamy camembert cheese.

Our philosophy has always been to give our wines time to develop in the bottle before release, a rarity in today’s market. Enjoying wines when they are ready to drink, rather than straight after bottling, when the wine has had time to develop and balance up in the bottle with no screaming parts. This cane cut is produced from Sauvignon Blanc vines planted in 1987. Hand harvested on the 17th of April at 23 baume. Fruit cold crushed to press and cold settled before a 12 o C ferment in barrel. Aged on light lees for four months before bottling.

Palate - Light and delicate with a tight, fine line of acidity, leading to a long focused palate with a creamy texture. Rich autolysis characters of brioche and nougat lead the way with hints of citrus, almond, fennel and hay. This refreshing wine has a long, dry, crisp finish. Winemaking The Chardonnay fruit is gently pressed off skins with a series of press fractions going to separate holding tanks for later assessment. The juice is settled bright and fermented cold with a neutral yeast strain in stainless steel. No malolactic fermentation takes place, so as to obtain a finer, tighter acid structure. The wine was then bottled on the 23rd of May 2019 with a dose of active yeast and sugar (known as ‘tirage’) to encourage the secondary ferment. The bottle ferment lasts approximately six weeks after which the tirage sparkling wine rests in storage for four years gaining complexity from contact with the yeast lees. When deemed to be balanced and with sufficient autolysis character, we send the bottles for riddling and disgorging where the yeast plug is removed and the cork inserted. This wine was disgorged on the 7th of July 2020. Storage/Bottling - The unique nature of this sparkling wine is that bottling occurs as part of the winemaking process early in the wine’s life. In the case of the Georgette, the final disgorging and packaging process occurs four years after the wine is first put to bottle. Heavy grade sparkling glass, stylish labeling and the traditional white hood of the Forester brand complete the elegant package.
