O'Leary Walker Hurtle Sparkling Pinot Noir Chardonnay

VINEYARD: O'Leary Family Vineyard is located at Oakbank, on a high, gently sloping hill with a north easterly aspect. The cool climate vineyard has characteristic even ripening influences and soils which are gravelly and well drained, providing the ideal terroir for Chardonnay and Pinot Noir. VINIFICATION: The cool climate Pinot Noir and Chardonnay base wines were given 100% malolactic fermentation to add complexity and creaminess to the mid-palate, and were matured and stored at O'Leary Walker Wines for 18 months on yeast lees. Pinot Noir for a sparkling base needs to be picked on flavour and acid balance. In 2010 this occurred later in the season, resulting in more mature fruit characters and a richer coloured wine. COLOUR: Straw yellow BOUQUET: Complexity from time on yeast lees, toast, citrus and a hint of strawberry. PALATE: The palate follows on with delicate fruit with great finesse and length, balanced with clean fresh acidity FOOD MATCH: A great aperitif style, fabulous with lobster and crab.

Swings & Roundabouts Sparkling is an enticing blend of 20% Sauvignon Blanc and 2% Semillon grapes with 78% Chenin Blanc grapes. These grapes were picked in the cool of night, and cold pressed, followed by fermentation with natural yeasts. This process led to the creation of a pale green-hued wine presenting beautiful bead. A swirl of the glass offers soft, fragrant fruit aromas. A sip of the wine reveals a fine mousse accompanied by lively flavours and tight acidity. The finish is fresh, creamy and lengthy. Made for immediate consumption, this dazzling white wine tastes splendid with fresh Exmouth prawns, compressed cucumber, and wakame salad with cured salmon. 

Bimbadgen Sparkling Semillon Non Vintage

Poured into a glass, this Sparkling Semillon flaunts a yellow green colour accompanied by a fine to medium bead. The bouquet is highly aromatic and exudes lime and citrus aromas with a touch of baked bread. The elegant palate offers lots of tangy fruit flavours that are accompanied by richness and residual sweetness. This wine has been crafted to be enjoyed fresh and young over two years from vintage. Morris Sparkling Shiraz Durif Non Vintage
