After aging, the wine shows a pale straw colour with gentle golden hues. Aromas of dried herbs, white flowers and preserved citrus lead to a textured palate of grapefruit pith, lime and rosemary. The acidity has softened with age, revealing a balanced, mineral finish that is drinking beautifully now.

Penfolds Bin 51 Riesling, Eden Valley

Introduced in 1999 (originally as Eden Valley Reserve Bin Riesling), Bin 51 (from 2006) captures the attributes of the Eden Valley, adjacent to the Barossa Valley. The region’s altitude and cool climate consistently produces Riesling of great finesse and elegance with a capacity for long term cellaring. Bin 51 is typically fragrant with intense lime and rose petal aromas and fine, cutting acidity. It develops complexity and richness with age without losing clarity, freshness or linear acid structure. Grape parcels are batch-vinified in steel tanks and bottled early under screw-caps to preserve pristine fruit characters, freshness and natural mineral quality.

Scorpo Pinot Gris

Scorpo produces another excellent example of Pinot Gris from the Mornington Peninsula. Lifted aromas of pear apricot and green apple lead into a palate rich and silky in texture, the flavours showing depth and complexity, the acidity in perfect balance.

Babo Pinot Grigio

The fruit was entirely hand-harvested and allowed 6 hours skin contact in the press before fermentation was carried out at cool temperatures to maximise fruit expression. This wine shows all the hallmarks of easy-going, classic Italian Pinot Grigio; subtle grapefruit and underlying floral and spice notes on the nose followed by citrus and peach flavours bound together by a tight minerality.

Te Whare Ra Pinot Gris

Anna and Jason Flowerday run the Te Whare Ra vineyard in Marlborough according to organic and bio-dynamic practices. The fruit is picked and sorted by hand, then processed in a winery especially designed for small-batch wine-making. This dry Pinot Gris is finely structured with great purity and length of flavour. Lifted aromas of nashi pear, raspberry, red apple and white florals follow on to the palate, where they're balanced by a fine, supple texture and lingering minerality.
