Church Block first appeared back in 1972 under the watchful eye of Greg Trott and was taken by one of the original vineyards that ran alongside the small Bethany Church, across the road from Wirra Wirra's old ironstone cellars. Over the last 4 decades, it has become one of Australia's favourites. The 2005 Church Block is showing just what a little patience can do. After six years, the velvet texture is the dominant feature with integrated tannin taking a backseat.

Battle of Bosworth are a terrific, family owned winery producing some of the best organic wines available in Australia today. Their Shiraz is typical McLaren Vale with dark fruit, fresh meat and milk chocolate that can be found on the nose as well as hints of marshmallow weed and spice if you look carefully. The Unicus is the product of Shiraz fruit that just could not be ignored in the Seaview subregion of McLaren Vale. When we see and taste exceptional, one of a kind fruit, it excites us to pick, nurture, and bring to your glass an exceptional wine. This powerful Shiraz shows illuminating purity of plums, black currants and a touch of cedar. There is spicy clove and black pepper on the nose, supported by red and black currant perfume. The length and drive of well structured tannins allow the Unicus to cellar well.

Subtle hints of oak and soft tannins support the fruitiness of raspberries and red currents in this approachable and very smooth red. Pair with pork and beef sausages with lots of mustard and chutney.
