Rich and full the palate is blessed with ripe peach, honeycomb and crème brulee flavours. Some nougat and spice elements lie underneath. A creamy textural feel is counterpointed by measured acidity. Pale straw with pear green at the edge. Bouquet An exquisite nose combines subtle flint with citrus blossom, verbena and white peony. Uncompromising varietal purity is joined by secondary complexities as baked almond pastry and subtle spice reveal time in oak with elegance and subtlety. Palate Terrific natural acidity is cut with lemon curd, natural yoghurt and crème fraiche. The gentle layering of secondary elements (hazelnut, biscuit and almond meal) builds shape and body. Pristine fruit and impeccable oak yield linearity and focus to a palate with stunning length and persistent, fine texture.

Chardonnay coming from the Bizot Vineyard in the Piccadilly Valley (Adelaide Hills), planted in 1996 at 500M altitude. Hand harvested (clones 76 and 95) on 1 March 2016 and whole bunch pressed (low yields of just 487.5L per tonne). Method Classic - first fermentation and ageing on full lees in old oak for 10 months, second fermentation and ageing in bottle on lees for 42 months. Disgorged September 2020.

Bright white gold with a hint of green, this elegant drop bursts with tropical guava, ripe pineapple, and white peach, wrapped in toasty French oak. A touch of citrus zest and nutty spice rounds out the nose. On the palate, think stone fruits, gentle oak spice, and a flicker of white pepper, all lifted by crisp acidity and a whisper of flinty minerality. Medium-bodied, zesty, and beautifully textured.

Attractive stone fruit and citrus aromas with complexity from maturation on fermentation lees. The palate is fine and long with persistent flavour supported by oak structure and length. Will drink well over the next 5 years.
