Surprisingly soft and plump with ripe and giving tannins; while it's dry, there's some sweet fruit sensation on the palate that helps with dishes that have heat spikes and spice, especially Indian. Lots of plum fruit, spice and earthy notes, too, with fine acid and the fizz hit offers a refreshing lift.

Sparkling Shiraz is one of Australia's truly unique wine styles and McGuigan do a fantastic job here with copious amounts of fresh and vibrant red fruit just bursting out of the glass.

Bollinger Special Cuvee is the result of the delicate blending between harvest grapes and a majority of reserve wines, including some, ages in magnums for more than 15 years in Bollingers cellars. A nice change from Aussie bubbles, this German brut has a surprisingly smooth and creamy taste for the uninitiated, with fizzing fruit flavours and a delicious lingering finish. Prost!
